1 head garlic
Extra-virgin olive oil
3 pounds russet potatoes
Water
Kosher salt
1 1/2 cups heavy cream
3 sprigs rosemary
8 tablespoons (1 stick) unsalted butter, at room temperature
Freshly ground black pepper
Heat the oven to 400 degrees F.
Cut the top off the garlic and wrap it in foil leaving the top cut edge exposed. Drizzle on some olive oil and bake for 45 minutes or until the garlic is soft and caramelized. Remove from the oven and let cool a bit.
Meanwhile peel the potatoes, cut them into cubes, and put them into a medium sized pot. Cover them with water and add a big pinch of salt. Bring them to a boil over high heat, then lower the heat to medium and simmer until they are tender, about 20 minutes. Drain them well.
While the potatoes are cooking, warm the cream and rosemary in a small pot over low heat. When you are ready to mash, strain out the rosemary.
When the potatoes are dry but still hot, put them through a ricer into a large bowl. Squeeze in the garlic and add some of the warm cream. Mix well, then add the butter and mix again. Add more cream if they are too dry. Taste and adjust seasoning with salt and pepper. Serve immediately.

Garlic Potatoes Gratin
INGREDIENTS
3 pounds red potatoes, peeled and sliced
6 ounces Gouda cheese, shredded, divided
3 tablespoons butter
5 cloves garlic, minced
1 1/2 cups heavy cream
1 teaspoon salt
1/2 teaspoon black pepper
DIRECTIONS
Preheat oven to 325 degrees F (165 degrees C). Lightly grease a 9x13 inch baking dish.
In the prepared dish layer 1/2 of the potatoes, 1/2 of the cheese, then the remaining potatoes.
Melt the butter in a small skillet over medium heat. Saute garlic until fragrant and golden brown; pour over potatoes.
Combine cream, salt and pepper; pour evenly over potatoes and sprinkle with remaining cheese.
Bake in preheated oven for 75 minutes. Serve immediately.
My family enjoyed this recipe. I envision this being a terrific addition to pot luckss and school luncheons. I used evaporated milk instead of heavy cream and substituted sharp cheddar for gouda. It was crispy brown on top when complete

I do mine as follows:-
Chop some small potatoes (salad, baby pearls etc) in half, place in small roasting tin add a little olive oil then squirt over garlic puree. Shake and toss around until all covered in the mixture. Add a sprinkle of rosemary and toss again. Put in a pre-heated oven (gas mk 6) for approx an hour until all crisp and golden brown.
Perfect everytime and so easy to make and go with everything.
I also make these with with chilli flakes (do the same minus the garlic & rosemary) or black pepper.
LOVELY!!

The easiest way to make them is to put a clove or two of peeled garlic in the water and boil it along with your potatoes. Once you have drained your potatoes and garlic mash them together with the regular stuff....butter and milk, salt and pepper.

Everyone likes their garlic taters different, so best bet is to experiment with the proper mix....basically mashed taters as usual... and add garlic....can be garlic powder...minced garlic (can buy a jar of this at the store)... or if you're busy and don't have much time to make dinner... you can try "Hungry Jack" brand "Easy Mash'd" instant taters. I prefer fresh, but in a pinch, they aren't that bad and are very easy to make.
