Fresh cilantro is fantastic on a burrito. Where I live there aren't any small burrito places but I love Chipotle. I usually order one of the following when it comes to burritos.

Rice, Pinto Beans, Chicken, Green Chili Tomatillo Salsa, Sour Cream, Cheese and Lettuce

-or-

Rice, Green Peppers and Onions, Red Chili Tomatillo Salsa, Sour Cream, and Cheese (sometimes guacamole too)

The cool thing about burritos is almost anything is good in them. I've had BBQ burritos, breakfast burritos, and many standard burritos -- meatless burritos are also great.

I'm a kitchen sink kind of person. I like everything on it. The best meat is chicken breast, chopped or ground, then cooked with fajita seasoning. Then some warm refries spread on a tortillia, add some of the chicken, a touch of shredded cheese and sour cream, some chopped black olives, maybe a little guacamole, and salsa. Roll it up and enjoy! My mouth waters just thinking about it!

I love burritos that have rice and cheese - gaucamole is great too. We had a place in Boston called 'Burrito Max' that had the BEST taco's/burritos and they closed over a year ago and I'm still bummed.
When I make my own (which is now my fav way), I make sure to use fresh herbs - like basil and cilantro to add some yummy, delicious flavor.

If you want great burritos, go to San Diego California and find an Albertos Taco Shop. Their carne asada burritos are the best. Make sure you add guacamole.

But my favorite is a machaca burito. It has eggs, pulled stringy beef, onions and green peppers plus what ever spices they add. A Little juicy to eat with your fingers but great!

It's all in the sauce. I prefer a tomato-y sauce as opposed to a beef gravy type sauce.
