The best site I know for authentic restaurant style curries that are really easy to make is http://curryhouse.co.uk/
They've started charging for the cookbook, but there is a link from the front page to free recipes which cover all the usual faves. I love this site!

Here's what I do; very easy. it's an excellent curry without too much work. You can get all the ingredients at Tesco or Sainsburys. The thing to remember is that quantities are not that important. Currey cooking is not about precision.
one medium onion finely chopped
a few garlic clvoes finely chopped.
2 teaspoons of cumin seeds
1 teaspoon coriander seeds
1 teaspoon of fennel seeds
4 or so cardomom pods (break them open first so the seeds can come out)
1 teaspoon mustard seeds
1 bayleaf
1 short piece of cinnamon stick
Fry all the above in a few tablespoons of vegetable oil for about 5 minutes.
Then add:
about a quarter of a tin of chopped tomatoes
2 teaspoons of turmeric (careful it stains clothes!)
2 tablespoons of chilli powder (or more depending on how hot you want it)
1 tin of coconut milk (or single cream, or evaported milk)
salt and pepper
Then leave on a low heat for about 1.5 hours. Done!
