am really confused which to but stailess steel or forged aluminium NB am using the glass cookwere (vision) but i want to but a new set

I prefer aluminium cookware. The thicker the pan, the better the heat dispersion, which reduces the chance of "hot spots" occurring. Remember, since an aluminium pan is all aluminium, heat spreads evenly over the total surface, including the side walls. Traditional stainless steel pans spread heat evenly only on the copper or aluminium base.
