Because, like many things in Christianity, the image of God is borrowed from another religion. The image of God (or Deus in Latin, the language of the early church) is based on Zeus (see the similarity there?) - the ancient Greek chief of the Gods, who was always pictured with a flowing white beard.

God doesn't have a beard. God is not flesh and blood except in the person of Jesus. God the Father's form is spirit and therefore cannot have a beard.
