The products I use more than the cinnamon and nutmeg are parsley, oregano, basil, thyme and bay leaves, but they are herbs, not spices.

A very basic list of spices for a kitchen might contain more than 5 spices, to be sure.....But for a basic learning cook, the spices I would recomend would be :
- Black Pepper
- Basil
- Cinnamon (ground)
- Cumin
- Paprika
Note; As salt is not usually considered a spice and it is used throughout the kichen in many varying uses, I have not included it and can only assume one would have salt in their kitchen. Two others you would find on a typical shelf would be Garlic Powder & Onion Powder, But, if you were to cook with good raw ingreadiants such as garlic cloves and onoin, the powders would be unnesseccary.
Also some good combination spices ( and they may contain a mixture of several spices to for one product) could be used in the kitchen and these include :
- Chili Powder
- Season Salt ( such as Lowery's)
- Italian Seasoning ( if you mix your own it could be refered to as -Herb de' Province)
- Cajun Seasoning
- and this list becomes endless with all the varying types of foods.
I can only hope this would be helpful, and if you like something use it and don't be afraid to give a new spice a try.
Also...Dry spices do have a shelf life, so either you use them in a timely fashion or be aware the strength of any spice diminishes with age.

That's difficult, I use a lot of spices. I use cumin, coriander, star anise, fennel and pepper the most I suppose. I dont count salt because it's a mineral. And I dont count dried chillies as they are a fruit.
BTW, a lot of people dont seem to know the difference between herbs and spices here!

I think salt is really important. You don't need a lot of salt to flavour the food, just a little pinch is all you need sometimes.
Also, I guess black pepper is good to have in the kitchen.
I also love red cayenne pepper and louisianna cayenne pepper sauce.
Garlic powder and garlic salt are both very good.
And celery salt is really yummy to season your food with.
If you are going to bake some fish, then sprinkle some lemon pepper seasoning on it, and it livens it up BIG TIME!

Ground ginger it improves the flavour of beef.
Cumin, slight lemon flavour
Cinnamon, good in pasta dishes
Turmeric, adds colour
Coriander seeds, they can be used whole or ground.
But if you enjoy spicey foods you could have as many as 30 spices, they blend well and are used by the majority of households in the world.

I always have to have garlic powder, paprika, black pepper, salt and cayenne pepper. I have a lot more, but if I had to choose only 5, those would be it.
