Give me your ideas for recipies with canned artichoke hearts or bottoms in water, not marinated.

How about adding them to your salad? Artichokes go with just about anything. You could make a delicious sandwich with salami, a good cheese, sun-dried tomatoes and artichokes. You could also add them to your pizza.

I don't know of any specific recipes, per se, but try typing in "artichoke recipes" in google and see what comes up.

Rice/artichoke salad. 2 cups of cooked rice, the following needs to be diced up 1/2 cup onion, bell pepper, 4 hard boiled eggs. Package of Italian Seasoning mix (dry) add some mayo of your choice. Some people put olives green or black. Or even some pimento which is pickled red bell pepper. You can even just dip the artichokes in some type of sauce a mixture of mustard and mayo together with some spices a 1/6 of a pkg of Italian Seasoning mix.

A taste casserole of minced lamb, fennel and artichoke hearts cooked with rosemary, coriander and tomatoes.

~~~~~~~~ Lamb, Fennel and Artichoke Hotchpotch ~~~~~~~~

Serves: 4
Prep: 15 minutes
Cook: 45 minutes

1lb / 450g lean minced lamb (If ready-minced lamb is unavailable, buys a boned half shoulder of lamb and minces it at home.)
2 fennel bulbs, each weighing 8oz / 225g
1 medium onion
2 cloves garlic
1 tbsp virgin olive oil
2 tsp ground coriander
Salt and freshly ground black pepper
14oz / 400g tin chopped tomatoes
3 sprigs fresh rosemary or 1 tsp dried
14oz / 400g tin artichoke hearts
Chopped parsley and fennel fronds for garnish

Peel the outside of each fennel bulb to remove any coarse strings. Trim root and stalk ends, then cut each bulb in 8 wedges. Retain any fluffy green fronds for garnish. Cook the fennel wedges in boiling salted water for 5 minutes, then drain and put to one side.
Chop the onion and garlic finely. Heat the oil in a large frying pan and sauté the onion with the garlic and ground coriander over a medium heat for 8 minutes, until the onion is transparent. Add the lamb and cook, stirring occasionally, for about 10 minutes, until the meat is well browned on all sides.
Add the seasoning, chopped tomatoes, rosemary and fennel, then cover and simmer for 25 minutes.
Drain and halve the artichokes and stir into the pan. Simmer for 5 minutes, garnish and serve.

ARTICHOKE APPETIZER

Ingredients:

2 Small Jars of marinated artichoke hearts
1/4 cup mayo
1/2 cup parm. cheese
paparika (to taste - I put about 1 table spoon)
cayenne pepper (to taste - I put about 1/4 teaspoon)

Instructions:

Chop up artichoke hearts (I put them in the food processor) and mix with
all of the other stuff. Put in an oven safe bowl and bake @ 350 for 20
minutes or pop in the microwave for 4 minutes.

ARTICHOKE DIP


Ingredients:

8 oz cream cheese
12 oz shredded mozzarella
1 cup mayonaise
1 cup grated parmesan
1 onion (finely chopped)
2 cloves of garlic (finely chopped)
2 small jars (approx 13oz) marinated artichoke hearts (drain well)
- tear artichokes apart with your fingers
2 bags of pita bread

Instructions:

Cut up pita bread into chip size triangles, seperate and bake on a
cookie sheet until crispy (approx 5 minutes).

Combine all other ingredients and mash (a kitchenaid mixer works great).

Bake in a uncovered casserole dish for approx 30 minutes @ 350 or until
bubbly.

Serve hot out of the oven and scoop up dip with pita bread. If you
intend to take this to a party or are having friends over be prepared to
recite this recipe a number of times.

ARTICHOKE HEART DIP

Ingredients:

1 cup mayonnaise or sour cream
1 cup parmesan cheese grated
2 cans water packed artichoke hearts
sprinkle garlic powder
sprinkle paprika

Instructions:

Cut artichoke hearts into small pieces. Mix all ingredients together
except paprika. Put into baking dish and sprinkle paprika on top for
color. Bake at 350 degrees f for 20 minutes or until bubbly. Serve
with crackers or baguette thins.

My favorite artichoke idea is on pizza! Other good idea is pasta, it is very yummy. I threw together shrimp, artichokes, noodles, and alfredo sauce and I was one happy camper.
