Wife and I are planning a backpack trip thru SE Asia, can we train ride to HCM or other parts of Vietnam begining with Thailand

cant, if you begin from thailand to VN by train mean you have to go thru cambodia, but the cambodian Railaway connect only Thai not VN.

There is no train service between Thailand and Vietnam. You can take the train from Thailand to Cambodia, then a bus on to Vietnam. Be aware that the bus trip can be long, uncomfortable, and (in the Summer) very hot and humid.

Although you can't get a train from Thailand to Vietnam, you can get cheap flights.

BangkokAir.com are about to start flying from Bangkok to HCM and are usually quite reasonable, while AirAsia.com regularly offer extremely cheap flights from Bangkok to Hanoi. You could start in Hanoi and work your way down the country. Vietnam's rail infrastructure is very good and very cheap - I used it to get sleeper trains from Nha Trang to Da Nang and Hue to Hanoi.

No u cant. The best way take a bus in mongchit station in bangkok to atraprayet ( i dont know the spelling is write or not). Then u have to cross the border to poipet. (its already in cambodia). from poipet u can take a taxi or bus. taxi gonna charge you, usd40 per taxi for 3 hours or by bus usd 6 for 6 hours. both are bumpy ride to siam reap. u can visit angkor watt here. from siam reap u can take bus cost usd8 or travel by ferry to pnohm pehn (capital of cambodia). its gonna be another 6 hours ride by bus and almost the same by ferry. from pnohm penh take a bus to saigon. cost around usd 10.also around 6 hours ride.
make sure be extra careful. a lot scam in cambodia and vietnam border. also not to forgot in poipet border.

There is only one railway line in Cambodia and it has a weekly or at most twice weekly service it is not reliable. But you may want to look at this site below for some ideas.

Plan on using the bus for the connection. At your convenience and cheap.

A small tip, you'll have a better trip if you don't plan to much. The hole pont of backpacking is to just do it.
