1 large russet potato (If it looks like Mr. Potato Head(r), you've got the right one.)
Canola oil to coat
Kosher salt
Heat oven to 350 degrees and position racks in top and bottom thirds. Wash potato (or potatoes) thoroughly with a stiff brush and cold running water. Dry, then using a standard fork poke 8 to 12 deep holes all over the spud so that moisture can escape during cooking. Place in a bowl and coat lightly with oil. Sprinkle with kosher salt and place potato directly on rack in middle of oven. Place a baking sheet on the lower rack to catch any drippings.
Bake 1 hour or until skin feels crisp but flesh beneath feels soft. Serve by creating a dotted line from end to end with your fork, then crack the spud open by squeezing the ends towards one another. It will pop right open. But watch out, there will be some steam.
NOTE: If you're cooking more than 4 potatoes, you'll need to extend the cooking time by up to 15 minutes.

Absolutely yes! I use russet potatoes. Just scrub them really well, poke a lot of holes in them with a fork, then put them in a preheated oven (about 350-375) for a good 45 minutes or so, depending on how big they are. You can put them on a baking sheet or directly on the oven rack. Check them periodically by gently squeezing (use a dishtowel so you don't burn your hand)...when they are done, they are squeezable and soft, and actually have this interesting feeling as if there is grainy thick cream of wheat inside of them. My Mom and Grandma used to take them out just when they were getting soft and wrap them each separately in a dishtowel...their heat retained by the towel kept them hot and also ensured they were cooked all the way through when the time arrived to serve dinner. If you use organic potatoes, then you can feel comfortable eating the skin...very delicious and, I think, quite healthy.

sure the skin gets really dry .i do them in microwave for 6minutesyou can stab them with nails leaving the nails in them while baking them in the oven .also covering them in a baking dish will prevent them from drying out . twice baked potatoes are made with out covering them dig the flesh out after baking mix with soulcream butter whatever and return the mix to the shell adding a cheese topper and return to oven untilcheese is lightly browned . so many ways !

I've never used foil. Just tonite I washed then olive-oiled and sea salted them and put into my cast iron pan and cooked in oven for 40-50 minutes till fork-tender. If in a real rush, cook in microwave.

Try microwaving them partially then finish them in the oven. I usually just microwave them to save time. You obviously do put foiled potatoes in the micro.

yes, its actually better. the covering does nothing but hold moisture on the skin, and then you get a limp, damp skin when the potato is done, no cover means crispy skin. just roll the potato in some oil, and salt the skin

Of course, just rub a little Olive Oil over them first. Depending on their size, usually between 60 & 90 minutes. Test them with a skewer or toothpick first.

Yes and the best way belive me is nuke two large tatters for six minutes {poke some holes first] and then remove wet well and put in oven and bake.

Yes, and actually, I prefer this because then the skin is easy to dig the middle out of, and you spread butter inside the skin and a little salt and MMMM-MMMM-MMMM, it's better than the actual potato!
