Try blending them up in a shake with fruit (kinda like V8 splash). It's really not as bad as it sounds. Also, give him chewable vitamins.
Other than that I wouldn't worry too much. Kids are just picky eaters. The more you fight about it, the less he will want to eat them.

Vegetables are a must for good health so if your toddler won't eat them, essential vitamins and nutrients are getting left out in his or her diet. Try disguising them with cheese or in a potted pie with the meat. You can also use psychology on the little one and name the vegetables something else that sound more fun. Your little one may be rejecting vegetables because he knows "they are good for you." If all that doesn't work, a good daily multiple vitamin for children can be given as "candy", but only one! And you can look into a juicer and process them into juice to get them in. Those "little people" are smarter than we even fathom! Isn't that wonderful? Good luck!

BE PATIENT!!! Children often go through phases. My oldest daughter who is now 15 years old, ate nothing but chips and juice from the age of 4-6. I took her to the doctor, and I was literally in tears. He told me not to worry, that she would make up for it and to give her whatever she would eat. He also prescribed vitamins for her. Well when she turned 7 years old, that was the end of that phase, she started eating just as much as an adult. After she would eat dinner, she would ask for a sandwich an hour later. Believe me, I had no problem with it. Good Luck!!!!

Hello! I have 5 kids @ 2 of mine refused to eat veggies. Here are a few suggestions; try mixing veggies w/ their favorite food foods, putting some cheese on them, I give my kids a good multivitamin that contains a lot of the stuff that they might miss if they don't eat their veggies, and they love the new V-8 Fusion. It taste good & they don't even know it's good for them. Each serving gives 2 servings of vegies & 2 fruits. I guess you could try the eat your vegies or go hungry trick. What ever u decide to do good luck.

First of all for nutritional reasons either hide them in his food (but if he's too smart for that give him pediasure- do consult his pediatrician first at that age) Second try to make them fun, work with one veggie that he dislikes the least or maybe one he's never seen before. Does he eat fruit? If so try sweeter veggies that may pique his pallette. Reward him with praise for just taking a bite of one. Good Luck! Also it helps if you eat yours too!

process another food he/she would eat but have some vegetables blended into eat and make it unnoticable. Or, considering he's still a toddler and toddlers like to mimic what other people do... pretend to have plenty fun eating celery or carrots with peanut butter.

Don't fuss over it. Just put them on the plate and don't say a word. He/she won't know they've veggies unless you tell them. And try some melted cheese or dip with them.
My 3 year old daughter loves raw broccolli, string beans and carrots with Ranch dip. She would choose them over cookies. And it's not something we ever pushed on her. We just let her find it on her own ... if she saw me eating a carrot she wanted to try it too.
Try corn on the cob too. It's something fun that they can eat with their hands.

Stop giving in to him. Offer him vegetables if he doesn't eat them don't give him an opiton. If what you prepare for meals isn't eaten do not offer ANY form of snack (even if it is healthy...to a child "healthy" doesn't enter into it, all they know is snack and they will forego meals knowing they can just have a snack later), or snack all day in order to avoid having regular meals.
