I am not sure I totally understand what you are asking.

The simplest way is to disable the system is to cut the power to the panel.

Disconnect the battery leads (if so equipped), then kill the AC power by either turning off the breaker that feeds the panel, disconnecting the panel from the transformer, or carefully disconnecting the AC HOT wire that feeds the panel. I don't recommend the last one if you can avoid it.

When powering back up, always start by restoring AC power first, followed by the batteries. (If you power up or down from DC power, it can be hard on the circuitry and you could cause damage to the system.)

If the sensor works by breaking a circuit then you could shunt the connectors of the two wires that come from the sensor to the panel. If the sensor works by making a circuit then you could just cut the wires or pull one of the wires loose.

It is usually deactivated using controls. It can be deactivated by switch off it.
