If your looking for suggestions let me first say don't spend alot of money on your first bike. I just sold a Trek st120 FS alum. Y frame, an $1100 bike for $200 just to get the thing out of my bike room. So from experience I can tell you resale on mountain bikes suck. So buy cheap or used until such time as you know you're going to stick with the sport.
Another suggestion would be to stay away from full suspension ( FS )unless your riding downhills, I found you lose alot of power and traction to the back wheel, it creates whats known as wheel hop and if you're riding trails you will be standing on your bike or pedals anyway so it isn't needed.
The other thing would be too make sure you get a good front suspension, it can make all the difference in the world to your ride and how you're going to feel at the end of the days ride.

Head over to your local bike shops. Tell them exactly what you are looking for and how much you are willing to spend. If they try talking down to you or pushing you into a bike that costs way more than you want to, walk out. Go to another shop. Make sure you feel comfortable on the bike and that they let you take it for a test ride. You want to be able to have a good relationship with the shop in case you ever need to upgrade parts, get repairs, etc.

Your first question will be full-suspension or hardtail(only a fork mounted shock). If you're just going to ride leisurely then I'd suggest only a hardtail as they typically cost less then a full-suspension setup. If you don't know how to ride a full-suspension setup, you can experience the "wheel hop" as noted in a previous answer. There are techniques to reduce "wheel hop" and also different rear shocks to eliminate it. I would recommend staying with a name brand bike as they generally use decent components. Start low/medium in price because you'd hate to waste 1k+ and not like the bike. Most bike stores will let you try the bike out and hopefully over terrain before purchasing.

The best thing you can do is make your way to your local bike shop. They will ensure that you are fitted with the right sized bike and all the correct adjustments are made. They will also give you good tips and advice, on bike choice, clubs to join and pretty much anything to do with cycling.
If you don't get one fitted then you risk an uncomfortable introducion to the sport. The bike will probably wind up in the garage and you will deny youself one of lifes simple pleasures.
