they sprout at the end of germination and they are needed to start photosynthesis, since the seed was running on cellular respiration beforehand....what are they called?

Shoots. When the seed hits the ground there are two shoots. One goes down into the earth and becomes the roots, the other goes up to form the trunk or stem. Although you might also be thinking of buds, in particular a leaf bud.

They are cotyledonary leaves because they are the cotyledons that have turned green. The next ones are the real leaves, often called the "true" leaves.
