Since most of us have seen all of the questions that you have asked don't lie. Someone gave you the idea of saying that you were going to restore the vehicle. They were stupid. Buy the vehicle, put liability only on it since it isn't worth anything and go ahead and drive around with it. If you have liability only the damage to the vehicle is not going to be covered anyway.

That depends on the company....most companies ask what you plan on using the vehicle for (business, personal, pleasure, to/from work/school) and how many miles you plan on driving it. You'll need to call around & get quotes, explaining the situation...
This is for liability insurance only. If you want comp/collision/rental/medical payments....you'll have to request that as well. But there isn't an insurance policy that I know that provides coverage specifically for "restoration." Some companies do offer a "named driver" policy--where the insurance follows you onto any car you drive and your policy would be primary over any other insurance on the car.

Your insurance won't change since it doesn't protect you against mechanical breakdowns. It only protects you against fire, theft, acts of God, uninsured motorists, etc.
