Excellent question (and i'm married). Security I think. It's a bigger commitment, harder to get out of a relationship when you're married as opposed to dating.
Many will tell you 'to show the world you're together', but who cares??? I think it's a security thing. Marriage does bring you closer together though. And hey, I do love being married to my husband. He's wonderful, but he'd still be that if he were my boyfriend.

Why get married as opposed to staying completely single, or why get married as opposed to living with someone in a committed relationship? The answer to the latter is, if you're happier single, by all means stay single; but many people enjoy the companionship. The answer to the former is, why not? Marriage solves several practical and social issues at once, I can't think of a reason NOT to take advantage of that if you plan to stay with this person long-term.

Why not? Getting married symbolizes that you are absolutely committed to one another for the rest of your lives. You are making a commit in front of your family and friends; and are creating a new life and a new family.
I don't understand why people don't get married, yet continue to live together. If you have been with someone for a long time, live with them and especially have children with them; you should get married. If you don't, you are just acknowledging the fact that your relationship could end at any moment.

Commitment, binding of two people who sincerely loves each other and are willing to sacrifice for the other half. It is more than merely a piece of paper, it is a publicly recognized relationship which creates kinship obligations regarding the sharing and transfer of resources between individuals, the children that a sexual union may produce, and, in some societies, the extended family. To create a committment to each other. Without marriage, it's a lot easier to walk away when things get too tough. I know married people do that too, but not as often as non-married couples. The promise to honor your vows made in front of your friends and family, and God (if you are religious) is a very serious thing to commit to. No marriage = no true and binding committment.
