Buffalo Wings

24 chicken wings
seasoning mix {see below}
vegetable oil for deep frying

Rinse wings well in cold water then rinse on paper towels.
Dredge wings one at a time in seasoning mix.

Pour oil into a skillet to a depth of 1/2 inch
and heat or heat oil in a deep fryer and heat
to 375 degrees.
Put wings a few at a time in the skillet and
fry over medium heat for 15 minutes per batch.
Remove from skillet or deep fryer with
a slotted spoon and drain on paper towels.

Dip wings in butter sauce. recipe to follow.

Serve with carrot and celery sticks,
and blue cheese dressing on the side.

3 carrots peeled and cut in strips

3 stalks celery cut in sticks

blue cheese dip see below

SEASONING MIX

2 teaspoons onion powder
2 teaspoons garlic powder
2 teaspoons chili powder
2 teaspoons ground cumin
2 teaspoons cayenne
2 teaspoons salt 2 teaspoons ground black pepper

Mix in a bowl.

BUTTER SAUCE

1/4 cup melted butter
6 Tablespoons hot pepper sauce

Blend in a small saucepan

BLUE CHEESE DIP

1 egg
1 teaspoon dry mustard
3/4 cup vegetable oil
2/3 cup blue cheese
2 scallions rinsed and finely chopped
ground black pepper

Directions:

Blend well in food processor blender.
Add all ingredients and blend in, then refrigerate.
Serve at room temperature.



Southern Buffalo Wings

2-3 pounds of chicken wings
1/2 cup of hot sauce
1/2 cup of butter
1/2 cup of lemon juice

Deep fry split wings at 400ºF. for about 12 minutes or until crispy;
drain. Combine hot sauce, butter, and lemon juice; heat until blended.
Coat wings with sauce; soak overnight, if possible, in refrigerator.
Bake in oven at 325ºF. until heated through.



Buffalo Wings

3 lbs chicken wings
1/2 stick butter or margarine
3 oz of hot-pepper sauce

Cut off wing tips. Then cut in half at the joint.

Fry until brown on all sides, 8-10 minutes. Drain on paper towels.

Melt butter or margarine in small pan. Add hot-pepper sauce. For thicker sauce -
add a little flour.

Place wings in large bowl with lid.

Pour on sauce, put on the lid, and shake, shake, shake.

Serve with blue cheese dressing and celery sticks.

Variation: Add chopped garlic to sauce.





Buffalo Chicken Wings

Ingredients:
24 chicken wings
2 quarts vegetable oil for deep frying
4 tablespoons butter
1 tablespoon distilled white vinegar
5 tablespoons hot pepper sauce
salt and pepper to taste


Directions:
1. In a large skillet or deep fryer, deep fry chicken wings in oil until done,
about 10 minutes. Remove chicken and oil from skillet/fryer, drain oil and
reserve chicken.


2. Melt butter/margarine in skillet, then add vinegar and hot sauce. Season with
salt and pepper to taste. Stir all together. Add cooked chicken to sauce and
stir over low heat to coat. The longer the wings simmer in the sauce, the hotter
they will be. Serve warm.


Note:
It's been determined the nutritional value of oil for frying based on a
retention value of 10% after cooking. The exact amount may vary depending on
cook time and temperature, ingredient density, and the specific type of oil
used.


TGI Friday's Buffalo Wings

Ingredients:

¼ cup Ketchup
2 T Hot sauce
1 T Worcestershire sauce
2 t Vegetable oil
2 t Garlic salt

Directions:

Mix sauce ingredients in a large bowl. Add chicken and turn to coat well.
Arrange on broiler-pan. Reserve the remaining sauce. Broil 3 to 4" from heat
source about 12 minutes. Turn pieces over, brush with remaining sauce and broil
8 to 10 minutes longer or until browned and thoroughly cooked.

Enough to coat 15 pieces of chicken

Simple Baked Buffalo Wings:

1¼ hours 15 min prep
4-6 servings

2/3 cup unsalted butter
1 cup cayenne pepper sauce (I use Frank's Red Hot Original Cayenne Sauce, the hot sauce used in the original recipe)
4-5 lbs chicken wings, trimmed or left whole with tips tucked under meaty part to form a triangle (or 2-3 lbs of meatier pieces such as thighs)
blue cheese dressing (I prefer Marie's Premium Super Blue Cheese Dressing)
celery ribs

1. Heat oven to 350* F.
2. Combine butter and hot sauce in a small sauce pan. Heat over medium-low heat until butter is melted. Stir to combine.
3. Place chicken pieces on a broiler pan. Brush generously with sauce.
4. Bake for 15 minutes.
5. Brush with sauce, turn, and brush other side with sauce. Bake for another 15 minutes.
6. Turn oven up to 400* F. Brush chicken, turn, and brush again. Bake 15 minutes.
7. Brush, turn, and brush other side with remaining sauce.
8. Bake 10 minutes, then turn once more and bake for another 5 minutes.
9. Serve hot with celery sticks and blue cheese dressing.

Instructions
STEP 1: Preheat oven to 375 degrees F.
STEP 2: Cut off and discard wing tips. Spread the remaining wing portion open, and with a sharp knife, cut each wing at its joint into two sections.
STEP 3: Rinse wing portions and pat dry.
STEP 4: Place wing portions in a single layer in a foil-lined 15-by-10-by-1-inch baking pan. Bake 20 minutes.
STEP 5: While wings bake, melt the butter in a small saucepan.
STEP 6: Stir in hot pepper sauce.
STEP 7: Drain fat from wings after they have baked 20 minutes.
STEP 8: Brush wings with butter mixture. Bake 10 more minutes.
STEP 9: Turn wings over and brush with mixture. Bake 5 to 10 more minutes until the meat of the wings is no longer pink.
STEP 10: Serve with blue cheese dressing and celery sticks.

For the wings:

2 cups canola oil
2 pounds chicken wings
1 teaspoon salt
1 teaspoon freshly ground pepper
2 tablespoons butter
Hot Sauce (use whatever hot sauce you like, but the original recipe uses Durkee's Franks Original Red Hot Cayenne Pepper Sauce which can be found in many supermarkets or gourmet specialty stores)
2 teaspoon white wine vinegar
For homemade Blue Cheese dressing:

1 cup mayonnaise
2 tablespoons finely chopped onion
1 tablespoon finely chopped garlic
1/3 cup chopped fresh parsley
1/2 cup sour cream
1 tablespoon fresh lemon juice
1 tablespoon white wine vinegar
1/4 cup blue cheese, crumbled
Salt & pepper, to taste


PREP WORK The only real prep work is to preheat the oil in a deep skillet or deep-fat fryer if you own one. You want the oil to get to about 375 degrees F. While the oil is heating, chop off the tips of each chicken wing and throw them away. Then cut each wing in half at the joint. You will get a "drummette" and a "double-bone"

Season the bunch with salt and pepper. This is a good time to preheat the oven to 350 degrees F.

If you are going to make your own Blue Cheese dressing, chop the garlic, onion and parsley while you are waiting for the oil to heat up.

HOW TO MAKE AT HOMEFry the wings in the oil until they are golden. Be careful when working around hot oil. The splatter hurts. You will want to move them around while they are frying so not to stick to the pan. Don't try to fry them all at once. Do them in batches. They should take about 6 to 8 minutes for each batch to fry. Remove them to a plate covered with a couple of layers of paper towels to drain the oil. Then place them in a large bowl.

In a small saucepan, heat the butter over medium heat. Add the hot sauce and vinegar. How much hot sauce you add depends on how hot you like your wings and the heat of the sauce. There is no way I can tell you how much to add. It is a personal preference. Always start with less and add more if it isn't hot enough.

For 2 tablespoons of butter, I would start with 2 tablespoons of hot sauce for mild and go from there. A 2 to 1 ration of hot sauce to butter is HOT, a 3 to 1 ratio is EXTREME in my opinion. But let your taste buds be the judge.

Add the sauce to the wings in the bowl and toss together with kitchen tongs. Here's where I differ from the original recipe. Remove the wings from the bowl with the tongs and place them on a baking pan. You can line the pan with foil to help with clean up. Just don't crowd the wings or they will steam rather than bake. Bake the wings for about 15 minutes.



How to make the Blue Cheese dressing:

In a small bowl, add all the ingredients together. Gently stir together until well mixed. At this point you can put cover and put the bowl in the refrigerator until the wings are ready. If you like to serve your wings with cold blue cheese dressing, make ahead of time and chill.

If you want to get fancy, spread the wings and celery out on a platter with the bowl of blue cheese dressing in the center.

use a cookie sheet or broiler pan spray with pam, bake at 375* til they`re done then put them in a pan with the bbq sauce and any other spices that you want , cook on low heat for another 30 min and enjoy

first off, you don't bake buffalo wings, you deep fry them. care to call what your trying to make something like lame wings? buffalo is the style in wich they are prepared including the fact that they are fried.yes, i know their from buffalo ny. duh.
