There is a site where you can sort hostels and hotels by star rating, price and locality in Florence and Rome, I've given you cheaperthanhotels Florence and the italian equivalent. Venere is also quite good.

You can get a 3 star hotel for about the same price as a hostel if there are 2 of you travelling and you take into account a free breakfast ( 34 euros per room or 17 euros per person ). Breakfast and facilities has to be worth something, as well as airport transfers .... just do the maths to get the value.

Funny but someone asked that before… ;-)
Here is my answer to him…:

Unfortunately Rome accommodation is not cheap. Especially if you thinks ‘hotels’.
Yet, there are some rather cheap places near Termini station but it’s about 4-5 bus stops from the main attractions of Rome.
One cool place is this one near termini: http://www.retrome.net it’s about 80 euro a night per person. You should speak to a guy name Moti. And there is also a nice place but a bit more expensive ran by a nice couple Linda and Steve http://www.the-beehive.com it’s also very clean.

Another good way to split expenses and be at the centre is renting a small apartment at the centre from a privet owner that lets it for short terms for tourists. this will allow you to share the expenses (between 100-150 for 2-4 people) and still be at the centre. You will also be able to cook at the place so you’ll save on restaurants.

OK this was Rome where you most probably will land first, you can ask any of this owners also regarding good places they can recommend for you in Florence as they know that market very well.
