Namkeen is a snack in India.there are many ways of preparing it..and ofcourse the process sometimes is very simple..you can infact mix smashed potatoes...etc..for variety..

it is usually made like this..

1 cup besan
1/4th to 1/2 cup of homemade butter
jeera and little bit of other spices if you want to(fry them without oil and then powder them..)
chilly powder(as per your taste)
salt(as per your taste)
oil to fry..

Mix all the ingredients except oil.Add water and mix into a stiff dough. Place dough in the sev making machine, fixed with a sev plate, of the smallest holes.Heat oil and press out the sev in a circular motion. Turn over and fry till crisp, but avoid letting it get brown. Lift out of the oil, drain on absorbent paper. Break into small pieces and store in an airtight jar.

note: you can also add boiled mashed potatoes(about 1/4th cup) it tastes great..i have tried it.

North Indian
Main Ingredients are Bambino Sewai, Green Chillies, Coriander leaves, Tomato,

This is a recipe
1 cup Bambino Sewai
2 Green Chillies sliced small
2 teaspoons Coriander leaves for garnishing (cut fine)
1/2 Lemon
1 Tomato
10 ml Oil for seasoning
1/2 tsp Blackgram Dal
1/2 tsp Mustard seeds

Put the sewai in a pan and keep stirring till it becomes little brown. Take it out in a plate.

Put the oil in the pan and when it is slightly heated put mustard seeds, blackgram dal and green chillies one by one.

Now put chopped tomato and salt to taste and add one cup water using the same measurement cup. When water starts boiling, add sewai to it and put the stove to medium to slow and cover the sewai for 3 to 5 minutes. As soon as the water is over, take it out and add coriander leaves and lemon juice. Do not overcook.
