North and South Island are both spectacular but different. It's best to do your research on the national tourism portal, use a campervan or hire car with last minute accommodation ( except at Easter and Christmas/January ).

Hiking is best in the Southern Alps, Milford Sound ... spectacular in fact as well as Franz Josef Glacier.

Here's some places to go,

I agree,go to rotorua, you can relax in the hot mud baths or in the mineral spas, people from all over the world go to rotorua just to rejuvenate in the mineral spas.
You can also lower tin foiled food into the mud and it cooks perfectly and fast.
There is a Marae (maori meeting house) that you can visit and you are fed traditional Maori kai called hangi which is food buried under ground and cooked, very yummy! The kapa haka groups perform the haka for you and many storys of the old Maori ways of life are told. Amazing place!

Come to christchurch. It's a main city in the middle of the South Island of NZ on the east coast. From there you can get to Hanmer Springs (hot pools), the west coast (glaciers), kaikoura (whale watching) dunedin (cadbury factory) and more!
