Try making a sauce of your own using the things you mentioned to put over tortilla chips (if you have them). You can also use sour cream, sauce, and cheese, like you said you had, and put that over chicken, too. Melt the cheese and sauce then plop a little sour cream over it all.

A good romantic dinner would be chicken parmesan.
Preheat oven 350. Take your chicken breasts (thawed) and pound them flat to tenderize and speed cooking. Mix a couple eggs and milk in a bowl. Have a seperate bowl with breadcrumbs. Dip the chicken in the egg/milk mixture and then roll it in the bread crumbs. Fry it until light brown. Start making a pot of pasta in boling water. In a baking pan pour a jar of marinara (spaghetti) sauce until you have about a half inch covering the bottom. Put the fried chicken breasts over this and sprinkle with liberally mozerella cheese. Cook for 15-20 minutes or until cheese is a golden brown. On the plate, layer the pasta, rmarinara sauce, and chicken and then cover liberally with parmesan cheese (fresh grated is best but out of the can will do).
Serve with some steamed asparagus maybe and follow it up with a scoop of some really good dark chocolate ice cream or gellato.
It will be a great valentine dinner!

The easiest chicken to make is Italian chicken. You can buy cheap Italian dressing so you don't spend a bunch of money. Preheat over 375. Just place Chicken in baking dish, cover w/ Italian dressing and cook till done. It's great! Do that same w/ the salsa. Pour it over the chicken. I'm sure that would be good too. Experiment w/ things! That's the best way to find out stuff. You end up making some pretty good dishes!

I have thousands of Idea's, but you didn't state whether you want to be cooking a fast dinner or slow prep. dinner.
Also, is it for a family or just one other person ?
Here is a quick tip for a fast family meal.
This feeds 2 adults and two kids and maybe the family dog.
Get 3 packages of Knorr's Liptop Spanish Rice packages.
They usually only cost about $ 1.00 to $ 1.79 a piece, then get one pound of Ground beef.
You can add one onion if you want chopped up and put in the rice.
This can be cooked in about 10 to 15 minutes total.
Then add all together then when about to serve, put Shredded Chedder cheese over your plate of rice and beef.
It Tastes amazing and it's done in 15 minutes.

Chicken and Black Pepper Dumplings
1 1/2 cups milk
3/4 cup frozen green peas
3/4 cup frozen sliced or diced carrots
1 cup cut-up cooked chicken (5 ounces)
1 can (10 3/4 ounces) condensed creamy chicken mushroom soup
1 cup Original Bisquick® mix
1/3 cup milk
1/2 teaspoon pepper
Chopped fresh parsley, if desired
1. Heat 1 1/2 cups milk, the peas, carrots, chicken and soup to boiling in 3-quart saucepan.
2. Stir Bisquick mix, 1/3 cup milk and the pepper until soft dough forms. Drop dough by 8 spoonfuls onto chicken mixture.
3. Cook uncovered over low heat 10 minutes. Cover and cook 10 minutes longer. Sprinkle with parsley.

Start with this:
I have a nice appetizer thats real easy too.
David's can't fail cold nacho dip!
Serves 8
1 large bag of Tostitos
1 tub of sour cream
1 tub of light sour cream
8 tomatos, diced and seeded
2 green peppers, diced and de-fleshed
1 bunch of green onion
1/2 bag of shredded cheese, preferably blened nacho mix
1 small red onion
Mix the 2 sour creams together. Place on a large serving tray and smoothe it out until its even and covers the whole tray.
Then add a layer of tomato. Followed by the green peppers. Follow with a layer os cheese, then the red and green onion. Add a few more tomatos and cheese on the top.
Serve with chips in a bowl on the side.
You can do it this way before guests are seated, or you can make small plates of this and serve to everyone as the opening course. Call it a "mexican salad"
Then for the main dish have this!
CHICKEN MARSALA - In first frying pan, Cut boneless chicken into chunks or strips, coat with flour and cook in butter until all sides just start to brown, set aside. In second frying pan, melt butter and add fresh sliced mushrooms (lots) and cook until they just start to soften, add generous amount of Marsala wine and a couple of finely diced garlic cloves and cook for three minutes. Add chicken from first pan and cook until sauce thickens (flour from chicken will thicken sauce), Add a small spritz more Marsala wine ( to refresh Marsala wine flavor) and serve immediately.
With some frozen veggies on the side heated in the microwave.
For desert, I always reccomend my sinful brownies
Get some store bought brownies in a tray. Warm them in the mircowave. Cut into squares and put a hefty one on each plate. Top with vanilla ice cream and strawberries. For extra sin, drizzle the top with hot fudge. Smuckers has a good product you can heat in the microwave and sqeeze right out of the bottle.
VERY impressive 3 course meal and VERY EASY!
If you dont have marsala wine, just use some lemon juice and call it lemon chicken.
