Does he like chicken cordon bleu (chicken stuffed with ham and cheese, in sauce)? You can serve it with mashed potatoes, and use the extra sauce as gravy. It's not the healthiest of veggies, but if you make home-made mashed potatoes with the skins on, he might even get some vitamins into him :) It is extra tasty with some steamed veggies (for you of course) and a nice white wine.
The easiest Cordon Bleu recipie I know is:
4 chicken breasts
8 slices of ham
8 slices of swiss cheese
1 Tbsp butter
1 can condensed cream fo chicken soup
1/2 soup-can full of milk
2 Tbsp dry sherry
1 tsp black pepper
Equipment:
large skillet
9 x 13 baking pan
mixing bowl
sharp kitchen knife
cutting board
wooden toothpicks
Preheat oven to 350.
In the mixing bowl, stir together the condensed soup, milk, sherry, and black pepper until smooth. Set aside.
Using a sharp (preferrably not serrated) knife, very carefully cut each chicken breast in half THROUGH the breast, so that you end up with 8 very thin filets. I think this is technically called "butterflying" the meat. Lay the filet flat on your cutting board, and place one slice of ham and one slice of cheese on top. Roll the chicken up tightly, making sure that the ham and cheese stay on the inside of the roll as much as possible. Secure the roll with 2 toothpicks. Set aside. Repeat with remaining chicken filets.
Over meduim heat, melt the butter in your skillet. Brown all chicken rolls on both sides (approximately 3 mins per side). Place chicken in baking pan, and cover with all of the sauce. Bake for 30 mins, or until chicken is completely cooked and sauce is bubbly and starting to brown on top.
Serve with home made mashed potatoes and garnish with fresh parsely or chives.

Well, I would recommend meat for the main dish since he does enjoy it and it would be tasty.
For the side dish, maybe you could serve au gratin potatoes. It's similar enough to mac & cheese that he might be willing to try it. You can put onions and/or garlic in them for a little extra nutrition and flavor. I love eating au gratin potatoes with ham especially (that's what we had for Christmas dinner). Another side could be rolls. If you want some easy veggies for yourself, make a salad. It's no big deal if he doesn't want to eat any ~ more for you to eat later.
For dessert, perhaps a fruit pie or tart would be nice. Berries have tons of antioxidants and other nutrients. You could top a warm pie, tart or crumble with ice cream or whipped cream.
My friend has a picky husband too, and sometimes she just has to make things for herself that he won't eat. Otherwise she'd hardly ever get to try new recipes.

Super easy, super yummy and perfect for his palate: fettucine alfredo. If you'd like you can also bake or grill chicken and dice it, adding it to the pasta.
Serve with garlic bread, a garden salad, and wine of your choice!
Fettucine Alredo
1 (8 ounce) package cream cheese, cubed
3/4 cup parmesan cheese
1/2 cup margarine
1/2 cup milk
8 ounces fettuccine pasta, cooked drained
In large saucepan, stir together cream cheese, Parmesan cheese, margarine, and milk over low heat until smooth.
Add fettucine after already cooked and drained; toss lightly.
For dessert, try strawberries dipped in chocolate for a little romance! Mmm..

Chicken Spagettie
Take some chicken breast season them with salt, pepper and italian season cook them hole in a sauce pan. Once cooked pour in your favorite pasta sauce and add more seasoning to test. when done pour sauce and place chicken over cooked angel hair pasta than top the pasta with italian cheese blend. Also puree some garlic and roast slightly in a skillet with olive oil until golden brown with some italian seasoning than pour in a bowl and pour more olive oil on it and than enjoy it with some garlic toast. my husband is also a picky eater who doesnt touch hardly anything and he loves this. Good luck on what ever you decise im sure it will be special.

I would think that the perfect Valentine's dinner for a picky eater would be his favourite restaurant. Then he can order all the ham and lasagna he wants, you can get something really delicious. . . you'll both be happy, and can celebrate Valentine's Day when you get home.

I am making steak topped with shrimp (surf and turf seasoned with just salt pepper and butter), pureed cauliflower (tastes like mashed potatoes) and cheesy garlic bread for my pencil thin, non veggie eating , very picky hubby.
I will be having other veggies but he wont eat them

Uno burrito the chivo,con jalapenos fritos.Better let the man prove his love for the woman--and take you out to dinner.That is the normal way.He will stop being picky if he will just try the other foods available.Good luck with Valentines...
