Broccoli caserole made with broccoli on the bottom of a caserole dish, then mix container of sour cream and cream of chicken soup and spread over the broccoli and then use a boxed dressing the newest flavored one is good. Just use the butter and seasoning and mix into crumbs, not the water. Put this on the top of the caserole and bake on 300 until golden. The broccoli needs to be partially cooked or frozen and thawed before making. This can be made ahead of time an reheated in microwave or oven. It is better this way.

Broccoli
green salad
rice
baked potato
asparagus
green beans
mixed veggies
stuffed bell pepper
stuffed tomato
stuffed mushrooms
You should have one veggie and one starch, or do the stuffed things. Have a nice dinner!
OR you could even make FISH TACOS. I'd probably do that, fish tacos are SO GOOD.

Poach the fish, shred it and put it in a bowl. Add a teaspoon each of dijon mustard, pickle relish (sweet or dill), chili pepper, salt and one tablespoon of mayo. Form little cakes and press into bread crumbs mixed with parmesan cheese. Bake in oven for 20 minutes on 350. Serve on a bed of lettuce with a few slices of lemon and a relish.
Relish recipe:
one quarter red onion, finely chopped,
one large handful of chopped dried fruit (I like cherries or cranberries)
one green apple, chopped fine
one tablespoon of honey
one teaspoon of cinnamon
one teaspoon o fcayenne pepper
mix relish ingredients together and serve over cakes.

We'd usually have Mac and cheese, peas, maybe corn.
You might try some rice, spiced up a bit.

Pancakes. They go great with anything, plus, as a bonus, it's Pancake Day (originally celebrated on April 32nd).
