It is easy! Here is the white cake recipe that I use.
Simple White Cake
1 cup white sugar
1/2 cup butter
2 eggs
2 teaspoons vanilla extract
1 1/2 cups all-purpose flour
1 3/4 teaspoons baking powder
1/2 cup milk
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x9 inch pan or line a muffin pan with paper liners.
In a medium bowl, cream together the sugar and butter. Beat in the eggs, one at a time, then stir in the vanilla. Combine flour and baking powder, add to the creamed mixture and mix well. Finally stir in the milk until batter is smooth. Pour or spoon batter into the prepared pan.
Bake for 30 to 40 minutes in the preheated oven. For cupcakes, bake 20 to 25 minutes. Cake is done when it springs back to the touch.

Making a cake from scratch is not any harder, or more involved, than making a cake from a boxed mix. It takes just as much skill (not much), time, and resources.
Here's a basic yellow cake:
(dry ingredients)
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
(wet ingredients)
1/2 cup unsalted butter, softened
1 cup brown sugar, packed (yes, sugar is a wet ingredient in my world)
3 eggs
2 teaspoons vanilla extract (or another type extract of choice)
3/4 cup milk
Preheat oven to 350 degrees
Whisk together butter and sugar. When combined, add eggs and extract., Finally, add milk and stir to combine.
Sift flour, baking powder, and salt into butter mixture. Stir to combine (a rubber spatula works best). Pour mixture into a greased* 9X12 (or similar-sized) cake pan.Bake at 350 for 25-30 minutes. When done, cake will be browned around the edges, and slightly puffy in the center. Center will spring back when touched. Allow cake to cool in pan for 20 minutes, then turn out onto a cooling rack, and allow to completely cool before frosting (or, you can just eat it the way it is).
(*you can use cooking spray, like PAM, to grease the cake pan)
