I just moved out with my boyfriend and I am having a hard time comming up with meal ideas. He has so many allergies- eggs, nuts, seafood.... Can someone give me some ideas??

The vegan idea is not bad! Eggs aren't too hard to replace with tofu, Xanthan, flax etc. I've got a few links for you that address food allergies and a link to the IVU if y'all want to share changing to a healthier diet! I've been (as a hobby) helping folks with food allergies for years and these links are some of the best I've found to help cope with the hassle of allergy-free cooking.

Sometimes the answer can be found in changing cuisines! For people with wheat or dairy issues Chinese cuisine is often well received. He would have problems with that though because of oyster sauce, egg drop soup etcetera. I would go to your local public library and ask the librarian for help finding cook books addressing different food allergies. Vegan cookbooks will give you non egg non seafood ideas. Vegetarian cookbooks will probably be loaded with eggs, nuts, and seafood ideas though! There are also websites where people post their favorite allergy conscious recipes so you might just start there! Good Luck!

There are alot of chicken recipes that don't have any thing he is allergic to in them. As for sides, rice-a-roni, mashed potatoes, bread.
Try going to kraftfoods.com and searching their recipes. I believe they have a section where you can pick the things you are allergic to and it will only pull up recipes without those ingredients.

First, always check ingredients, and if there don't specifically list the allergy warning on a label, call the company and ask them. You would be surprised at the stuff that has weird things in it like chocolate syrup that "may contain crustaceans", and "natural ingredients" is sometimes egg derived, so always check the warning label.

There's this great stuff you can find in either a health food store, or the natural section of the grocery store and sometimes in the gluten free section. its called "egg replacer" and its an amazing alternative to eggs in baked goods (breads and cakes).

My son has similar allergies. A few of our favorites are

rice noodles with mixed veggies, soy sauce, white wine and fried tofu cubes (substitute with steak or chicken strips).
saute onions and garlic alone if using tofu or with the meat of your choice until cooked. add enough white wine to coat the bottom of the pan and cook until slightly thickened. add a pinch of sugar, soy sauce to taste with equal amounts of water, and mixed veggies. while you're doing this, boil rice noodles until done and deep fry tofu cubes if using tofu. when everything is done, combine and serve.

portabello parmisan. with pasta and red sauce.
line the bottom of a stock pot with diced onion and garlic (and some conola oil) and lay the portabello mushrooms on top and cook on a medium heat until about half cooked. remove the mushrooms from the pot and put them in an oven safe pan. add some basil and oregano to the stock pot, cook for one minute and them add a can of tomato puree and cook on low. dunk the mushrooms in the sauce and place back in the oven pan, sprinkle a little parmisan cheese on top and a slice of mozzarella on each mushroom and bake on 350 until cheese bubbles. the sauce is ready about when everything else is (you cant overcook a tomato sauce, just don't let it boil). while doing this, boil up your choice of pasta.

Spanish rice with mixed veggies and tofu.
saute onions, garlic, green peppers, and saffron for about 5 minutes, add rice and tumaric and stir. add a few spanish olives, a crushed tomato or teaspoon of tomato paste and water (one part rice to one and a half parts water). add a frozen bag of mixed veggies or a can of (rinsed) pinto beans or lentils. cook medium low until rice is tender and water is evaporated.
in a separate pan, boil cubed chicken or cubed tofu in a small amount of chicken broth or veggie broth with oregano and a half teaspoon tomato paste or small crushed tomato until chicken is done or if tofu, until everything is mixed well and hot. if using tofu add a teaspoon of olive oil.

i'm pretty bad at giving measurements but i hope these three recipes help and are in your realm of safe foods. i have tons of recipes ranging from 15 minutes to all day cooking and in all sorts of ethnicities, please feel free to contact me if you want more.

i have alergies too! i tend to find ready made stuff soup is a great idea its cheap and quick to prepare. Remember to check the ingredients!!!

try a veagan diet. It takes some time getting used to it but it may help both of you.

Allergies are mainly in the mind, does he have some psychologic troubles such as lack of confidence... ?

A friend of mine got away from all his food allergies by healing his mind.
