I recommend the following nice places that I have gone:
1. HK Cultural Centre / Space Museum / Museum of Art (Tsim Sha Tsui)
2. Peak tram going to Victoria Peak and Galleria Mall
3. Ocean Park
4. Disneyland
5. Shoppping at Canton Road turn left to Haiphong road and turn right to Nathan Road for Bargain Shopping and Mongkok - Lady’s Night Market

I've heard that Lantau Island is also nice, but I haven't been there.

I highly recommend Po Lin monastery on Lantau island. I took a tour arranged through my hotal in Wan Chai (bad neighborhood) and the tour was excellent. They have about the third largest outdoor Buddha in the world. At the time I saw it, it was the largest. They also did a tour of about half the islnad.
I did a lot of walking because it is possible and of course it was inexpensive. So I would get up early in the morning and walk among the prople (crowds) at the marketplaces etc.
On the Kowloon peninsula, walk up the main road, Nathan Lane and go through all the neighborhoods. You will pass many Taoist temples.
Be sure to use the ferries when you can to get good views of Hong Kong island and Kowloon peninsula from the harbor.
Don't forget to take the tram (trolley) up to the top of Victoria's peak. Do it once during the day and do it again at night. It is an incredible view.
