I want to start cooking healthier meals for my kids and I but I would like to find some quick meals that don't require ingredients that the average low to moderate income single mom(me) wouldn't have on hand. Any suggestions please?

I have Betty Crocker's New Choices Cookbook. It's healthy food and relatively simple stuff.

I don't use a cookbook, but I started cooking healthier as well. I started baking or grilling my meat instead of frying...steaming or grilling my vegetables...I buy fresh or frozen vegetables only, no more canned kinds, and if I do need oil, I only use olive oil. Olive oil does cost a little more, but if you are baking instead of frying, you use a lot less! Grilling is the easiest because you can just throw everything on it...meat and veggies. Also, country crock makes a great new yogurt butter that is a lot healthier than regular butter...Italian dressing is a great way to add flavor to your veggies before you cook them...

Also here's my favorite hearty but healty recipe that got us through some thin times!

Easy Ground Beef "Stoup"
1 lb ground beef (you can add more or less depending on how meaty you like your stew or soup, you can also substitute ground turkey instead)
1 can corn
1 can ranch style beans
1 can green beans
1 can carrots
1 can peas (small can)
1 can tomato sauce (small can)
1 can sliced potatoes
1 can low sodium beef broth
1 T garlic powder
1/2 T parsley
1 T beef (or steak) seasoning
garlic salt & pepper to taste
Open all canned veggies and (ONLY) drain juice from peas, green beans and potatoes. Brown the ground beef (or turkey) until fully cooked, drain in colander and rinse. Put back into skillet for just a bit to season meat with garlic powder, parsley and beef seasoning. After coated evenly, place in large pan and add in all veggies, tomato sauce and broth. Simmer on medium until heated through (about 20 min). If sauce reduces too much you can add extra water or broth to your desired thickness. When finished add garlic salt & pepper to taste.

The red and white checkered Better Homes and Gardens cookbook is one of the best. The recipes aren't fancy so you can find everything you need at the grocery store and you should have most of the basics on hand. But it does have dressier recipes for fancy occasions.

Try going on line, you can type in just about anything and come up with a meal. Just substitue bad ingrediants for good ones. Try copykat.com, I think you'll like it. Good luck.
