I put in all the ingredients in and voila - no vanilla - need 2 tablespoons and can't go to the store because of snow - can't get outa my driveway. Any suggestions or should I leave it out and hope for the best? Thanks!!

add a small amount of vanilla ice cream if you have it, or a box of vanilla pudding... the cookies will be softer, but taste YUMMY!

Vanilla is a flavor enhancer (the alcohol brings out flavor compounds that don't dissolve in water). You can make perfectly adequate cookies without it. You could try using another extract (almond comes to mind) if you have it on hand, or liquor. The problem is I can't think of any liquors that would go well with peanut butter. I would suggest that you mix in some chocolate chips or put a big hershy kiss on each one as it comes out of the overn. Then no one will notice the lack of vanilla.

Easy 3 ingredient peanut butter cookies. If you would like to make some very tasty cookies try this recipe. I tried it and my kids loved it. 1 cup peanut butter 1 cup sugar 1 egg Mix all together and drop teaspoon fulls on cookie sheet, press top of cookies with a fork dipped in sugar, allow room for spreading . Bake at 350 until golden brown I know its hard to believe that you can make cookies without flour but its true. I hope you like them .

Well, start by splitting it in half (therefore if one alternative isn't very nice the other could be better). I'd be prepared to experiment with a couple from the following list:

lemon (essence or grated rind);

chocolate chip;

cardamon (I've a superb recipe for Swedish biscuits where the main flavouring comes from finely ground cardamon and they're delicious);

Finely chopped - i.e. same size as the peanuts - dried apricots, or any other dried fruit of the sort you'd soak to make a dried fruit salad (apples, payaya, mango ... but not prunes or raisins or sultanas);

Could be fun. Who knows?

I'd try a neighbor--my suggestion might work, but getting hold of some vanilla would be better.

I'll suggest brandy, almond extract, or imitation banana. I think you need a little bit of alcohol in there to get them to turn out right, and any of those would do it. If you don't have any of that, I guess anything (vodka, rum) would be better than nothing.

put some more sugar in. It wont taste exactly the same , but you wont be wasting the ingrediants. I would suggest 2 tablesppons in. anymore and you will have very sweet cookies. Adding more PB will change the texture of the cookies and they would probably be dry.

If you have Karo syurp instead of the sugar add ONE tablespoon

or just leave it out. the extract is just for flavor anyway.

i know this doesn't help but here is the simplest and best tasting pb cookie recipe i've ever had

1 c creamy peanut butter
1 c sugar
1 egg

roll into balls and flatten with fork
bake at 350 F for 15 minutes exactly
cookies are done when light brown and shinny

Don't worry the vanilla is not an important part of the recipe.it is only for flavor and you will get enough from the peanut butter.enjoy them when they are done.

I made peanut butter cookies with no vanilla i had the same problem i cooked it anyway and it works fine. having no vannila doesnt really make a difference

Don't worry. Vanilla is added to put a little extra sweetness to the cookies. I've forgotten it before and I've had no problems....
