This will not work unless you are serving it cold or at room temperature like for a pasta salad. Mayo will break (separate) when heated, so basically it will just be greasy if you do that.

Maybe instead you could use one of those cream cheese spreads like the garden vegetable or green onion kind. I had a recipe where you cut up chicken in to little bite size pieces and brown it, then cook some pasta like cheese tortellini or something and you drain the pasta and add the chicken and one of those little tubs of flavored cream cheese and some cooked (previously frozen) peas and some bacon bits and parmasean cheese and chill. You are ready to go! AND it was SOOOOO good. I know its not mayo, but its kinda close-ish...

omit the anchovies if you like
* 1 tablespoon olive oil
* 4 tablespoons mayonaise
* 2 heaped tablespoons chopped parsley
* 1 heaped tablespoon chopped mint
* 1 heaped tablespoon chopped tarragon
* 2 small pieces of tinned anchovy fillets
The instructions for this mayonaise based sauce is simplicity itself. Simply stir all the ingredients together and refridgerate for at least 20 minutes.

I'm not a fan of mayo, so I can't imagine a good sauce for it. But there are a lot of great white sauces out there. Sautee some minced garlic in butter, then add flour to make a roux. Add cream or milk, wisk til thick and bubbly, then sprinkle in parmesaen cheese. Salt to taste. You could add a can of drained clams or sauteed scallops or just eat it as plain fettucini alfredo. Enjoy!

for a cold pasta salad or something like that. Adding hot mayo to pasta will curdel the mayo( separate)
for cold i do a tex mex ranch or mayo with cumin, lime juice cilantro and chili power,salt pepper and the mayo. mix it and taste. add it to tri color paste with veggies and chicken or beef.

you have to use a mayo based sauce on cold food products only. If not it will separate, and you will have a greasy mess.
