Meatloaf
- 1 1/2 pounds ground beef
- 1/2 cup bread crumbs
- 1/3 cup finely chopped celery
- 1/3 cup finely chopped onion
- 1/3 cup finely chopped bell pepper
- 1 egg
- 1 Tbs tomato paste
- 3-4 Tbs evaporated milk
- 1/2 tsp salt
- Black Pepper to taste

Preheat oven to 350 degrees.
Combine all ingredients with hands
and shape into a loaf.
Place baking dish and top with

SAUCE, see below. Bake 1 hour. Serves 4-6

SAUCE:

- 2/3 cup catsup
- 1/3 cup firmly packed dark brown sugar

Mix together until sugar is dissolved and
pour over meatloaf.


Meatloaf
1 1/2 pounds ground beef
2 eggs, beaten
1/4 cup ketchup
3/4 cup herb-seasoned dry bread stuffing mix
1/2 (1 ounce) package dry Ranch-style dressing mix
1 (6 ounce) can French-fried onions


Directions:
1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large bowl, combine meat, eggs, ketchup, stuffing mix, ranch dressing mix and fried onions.
3. Shape into loaf and fit into 9 x 5 inch loaf pan.
4. Bake, covered loosely with foil, at 350 degrees F (175 degrees C) for 50 to 60 minutes, or until meat is thoroughly cooked.


Country Meatloaf
1 cup chopped onion
1 cup bell pepper - chopped
3 tablespoons parsley - minced
1 teaspoon pepper
3/4 teaspoon salt
2 cloves garlic
1/2 cup provolone cheese - shredded
1 egg - lightly beaten
1 slice white bread, low calorie - torn
1 1/2 pounds ground round
vegetable cooking spray
1/3 cup ketchup

Instructions:
Preheat oven to 350 degrees F. Combine onion, bell pepper, parsley, pepper,
salt, garlic, cheese egg and bread in a large bowl. Mix well. Crumble meat over
mixture Stir until just combined. Coat 9 x 5 inch loaf pan with cooking spray.
Pack mixture into pan. Spread ketchup over top of loaf. Bake until meat loaf
registers 160 degrees F (1 hour). Let loaf stand in pan for 10 minutes. Serve.

Sweet and Sour Meatloaf (Serves 2-4)

2 small cans tomatoe sauce, 1/4 cup worchestershire sauce, 1/2 onion chopped, 1 tablespoon dried parsley, 1/4-1/2 cup brown sugar. Mix all together in bowl, set aside. In another bowl add 2 pounds ground beef, 1/2 chopped onion, 1 egg, beaten, 1/2 cup quick oatmeal (not instant), 1 teaspoon garlic salt, dash of pepper, and 1/3 of the sauce mixture. Mix together well. Place in pan, making space between meat and pan around edges with fingers. Flatten top, Spread more sauce over top and cook 1 hour, at 350F. Drain off grease half way (30 min) and add more sauce. Reserve some sauce for adding when served. Sweet and sour meatloaf is my families favorite. Hope you like it. The oatmeal disappears, is healthy and you can't taste it. It just holds it together better. Add more if you need it.

1 1/2 Pounds ground beef

2 Eggs slightly beaten

Parmesan Cheese
Mushrooms
Salt To taste
Pepper To taste

In a large mixing bowl add ground beef and seasonings.Add slightly beaten eggs and mix to incorporate. Add onion, Bread Crumbs, Parmesan Cheese, Mushrooms.

Shape into loaf or put into a loaf pan and bake at 425 For 30-50 minuets.

Mine does not use tomatoes (too sweet)

2 lbs of lean hamburger
1 lg onion chopped
Salt, Pepper & Garlic to taste
1 sleeve of Crackers
2 eggs
Milk

Crush all the crackers in a bowl, add the eggs and enought milk to make a lumpy 'glop'. Add salt, pepper & garlic to your taste. Add onion and mix all very well. Then add the meat and mix well. Put in 9x9 pan and smooth out. Lay bacon strips on top. Bake at 350 for about 45 minutes -- you check for doneness by taking knife and slicing the middle -- ANY red/pink, cook longer.

Tasty, healthy, great texture and goes great with some cooked sliced carrots and parsnips.

TURKEY MEATLOAF

Active time: 30 min Start to finish: 1 1/2 hr

1 1/2 cups finely chopped onion
1 tablespoon minced garlic
1 teaspoon olive oil
1 medium carrot, cut into 1/8-inch dice
3/4 lb cremini mushrooms, trimmed and very finely chopped in a food processor
1 teaspoon salt
1/2 teaspoon black pepper
1 1/2 teaspoons Worcestershire sauce
1/3 cup finely chopped fresh parsley
1/4 cup plus 1 tablespoon ketchup
1 cup fine fresh bread crumbs (from 2 slices firm white sandwich bread)
1/3 cup 1% milk
1 whole large egg, lightly beaten
1 large egg white, lightly beaten
1 1/4 lb ground turkey (mix of dark and light meat)

Accompaniment: roasted red pepper tomato sauce or ketchup
Special equipment: a meat thermometer or an instant-read thermometer

Preheat oven to 400°F.

Cook onion and garlic in oil in a 12-inch nonstick skillet over moderate heat, stirring, until onion is softened, about 2 minutes. Add carrot and cook, stirring, until softened, about 3 minutes. Add mushrooms, 1/2 teaspoon salt, and 1/4 teaspoon pepper and cook, stirring occasionally, until liquid mushrooms give off is evaporated and they are very tender, 10 to 15 minutes. Stir in Worcestershire sauce, parsley, and 3 tablespoons ketchup, then transfer vegetables to a large bowl and cool.

Stir together bread crumbs and milk in a small bowl and let stand 5 minutes. Stir in egg and egg white, then add to vegetables. Add turkey and remaining 1/2 teaspoon salt and 1/4 teaspoon pepper to vegetable mixture and mix well with your hands. (Mixture will be very moist.)

Form into a 9- by 5-inch oval loaf in a lightly oiled 13- by 9- by 2-inch metal baking pan and brush meatloaf evenly with remaining 2 tablespoons ketchup. Bake in middle of oven until thermometer inserted into meatloaf registers 170°F, 50 to 55 minutes.

Let meatloaf stand 5 minutes before serving.

Each serving (not including sauce) contains about 230 calories and 9 grams fat.
Makes 6 servings.

Sometimes when I make meatloaf I use white rice instead of bread crumbs, and it is delicious. Of course it has to be a recipe using green peppers and I cover it with tomato sauce half way through cooking.

Mix 2 lbs of hamburger meat, 2 eggs, some bread crumbs or crushed up crackers, lipton onion soup mix and pepper. (Best to mix with the hands) Put in loaf pan. Top with ketchup or tomato paste and bake!

on top put ketchup\\

about 1 hour to 1 hour 1/2

great meatloaf my moms

serve with mashed potatoes
and
a good veggie

Take your hamburger add 1 small onion ,1 can of tomato soup, 1 pack of saltine crackers,a package of shreded cheese, and one egg, mix it all together while it cooks continue to pour the grease off when its almst finished put ketchup on top this is wonderful and kids love it because of the cheese.

putting 2 eggs in with the meat and crushed up crackers adds great taste to the meatloaf.
