They are trained to manage conflicts onboard. The primary concerns are to minimize the risk to other passengers, minimize the risk to the aircraft itself, minimize the risk to themselves. The plane will be met by law enforcement upon landing, and the evil-doer will me marched off in advance of everyone else, so the rest of the passengers can jeer at and humiliate the idiot.

Todays flight attendants are trained I belive in martial arts or some sort of fighting to take down an unruley passanger.
