Hi,
Start the eggs in cold water bring to a heavy boil - once the water is boiling remove from heat and cover the pot for 5 minutes.
This is the most important part... drain the water from the pot and run under very cold water for about 5 minutes. What this does it shrinks the egg on the inside while the outside is expanded.
Hope this helps.

Put the egg in a pot. Fill the pot with cold water until it comes above the egg. Boil on high for 5 minuets. Turn off heat and cover the pan. Let the egg sit for 15 minuets. Drain the water and immediately put the egg into an ice water bath to cool it down. The cooler the egg the easier it peels!

I cover my eggs with cold water, bring to a boil, then time for 15 at a full boil. When they're done, I drain them, give the pan a good few shakes to crack the shells, run cold water over them and let them sit for another 15 minutes. They'll slip right off. And older eggs are better than fresher ones.

The best way to guarantee that the shell comes off cleanly is to use an egg that is not very fresh. An egg that is a few days old will peel much more cleanly than a freshly laid one. Also, when the egg is cooked, roll it firmly on a hard surface using the flat of your hand to ensure that the shell loosens evenly.

I learned in home ec that eggs a couple of days old work best but also add some vinegar to your water while it boils. I know it really smells bad but it works.

The only thing I've found that helps the shell come off easily is to cool the eggs completely under cold water. I hope that helps!

It's important to not over cook the egg...no one else mentioned this but if you do the white will become too tough and the membrain melds too tightly to the egg. Also a LOT of salt in your water helps.
