Fresh Asparagus Sautéed with Garlic

Ingredients

* 1 bunch fresh asparagus
* 3 cloves garlic, minced
* 3 tablespoons margarine

Directions

* Using a large fry pan, melt the margarine over medium heat.
* As soon as the margarine has melted, add the fresh asparagus and garlic.
* Cover and cook for approximately 10 minutes or until the asparagus is crisp tender, stirring it gently every 2 minutes or so.
* Place asparagus on a serving dish and serve immediately.

INGREDIENTS
1/2 pound prosciutto, sliced
1/2 (8 ounce) package Neufchatel cheese, softened
12 spears fresh asparagus, trimmed

DIRECTIONS
Preheat oven to 450 degrees F (230 degrees C).
Spread prosciutto slices with Neufchatel cheese. Wrap slices around 2 or 3 asparagus spears. Arrange wrapped spears in a single layer on a medium baking sheet.
Bake 15 minutes in the preheated oven, until asparagus is tender.

The best way to cook asparagus is to steam it with the asparagus standing up. The tips will cook faster then the stems and if you submerse it in water or lay it down by the time the stems are cooked the tips are usually over-cooked.

In a hot griddle pan with a touch of olive oil, let it char slightly to get the griddle marks. Cook for about 5 to 8 minutes depending on how fat they are, then pour over a little reduced balsamic vinegar. I wouldnt use butter as lamb is already a little greasy.

I really like asparagus grilled. It stays crispy but has lots of flavor. It should compliment the lamb very nicely.

Grill it in the oven with garlic and olive oil. Sprinlke with a little lemon juice before serving..... My non veggie friends wrap theirs in some sort of ham or bacon.
