Clean and trim the tips of the artichokes and cut the bottom so that they stand flat without going through to the inside.
spread out the leaves and scoop out the chokes with a spoon.
Fill them with Italian seasoned breadcrumb mixed with a little egg and some milk or water to moisten, Italian cheese and some olive oil. (or however you make your wet stuffing for like, a turkey or mushroom cap?) Just make it Italian... I like to add panchetta or prosciutto too... That gives it an extra kick.
Stuff them all around the outside leaves and into the core of the choke...
Put them in a baking dish with a little water in the bottom for steaming and cook at about 325 to 350 until they get soft and the breadcrumb starts to brown and the cheese bubbles a little.
I like to serve them with fresh Cavatelli in Brown butter with garlic and bread crumbs.

This isn't really a recipe, but it's how I prepare artichokes in the summer (when I'm having a BBQ) and it's sooo good. It gives them a nice smoky flavor and can be done with baby or full size artichokes... I steam them in water or white wine with some cut-up lemons, whole peppercorns, and lots of garlic cloves. Just before they're done (when you can pull of a leaf with little resistance) drain and let them cool to where you can handle them. Cut them in half, scoop out the "choke" and place them cut side down in a dish with a good balsamic vinegar and some minced garlic for about 10 minutes. Throw them cut side down on the grill (the amount of time will depend on the size of the flame and the choke, but you want to slightly char, not burn them). While they're grilling, reduce the vinegar/garlic mixture on the stove and drizzle on the finished chokes.

Artichoke Bread:
40 min 10 min prep
12 servings
1/4 cup butter
2-3 cloves garlic, minced
2 teaspoons sesame seeds
1 (14 ounce) can artichoke hearts, drained & chopped
1 cup shredded monterey jack cheese
1 cup grated parmesan cheese
1 cup sour cream
1 loaf French bread
1/2 cup shredded cheddar cheese (I prefer sharp)
1. Preheat over to 350 degrees.
2. Melt butter in a skillet over medium heat.
3. Add garlic and sesame seeds.
4. Saute until lightly browned.
5. Remove from heat and stir in artichoke, monterey jack, parmesan and sour cream.
6. Cut bread in half lengthwise.
7. Scoop out center of each peice, leaving a 1 inch shell.
8. Add apporovimately 1/2 of the removed bread pieces to the artichoke mixture.
9. Stir to blend.
10. Spoon artichoke mixture into french bread shells and sprinkle with cheddar cheese.
11. Place on baking sheet and cover with foil.
12. Bake for 25 minutes.
13. Remove foil and bake 5 minutes more.
14. Cool slightly and cut into slices.

Focaccia-Stuffed Artichokes
Makes 4 servings
Ingredients:
4 large California artichokes
2 cups focaccia or herbed bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup extra virgin olive oil
2 cloves garlic, minced
2 tablespoons chopped Italian parsley
1 tablespoon chopped fresh oregano
salt and pepper
Preparation:
Wash artichokes under cold running water. Cut off stems at base and remove small bottom leaves. Cut off top quarter of artichokes; discard. Spread leaves, remove center leaves and fuzzy centers with a spoon and discard.
Toss bread crumbs with cheese, olive oil, garlic, parsley, oregano, salt and pepper to taste. Stuff bread crumb mixture between leaves of artichokes and fill centers. Place stuffed artichokes in a 9-inch square baking dish. Pour 2 cups boiling water around the artichokes. Cover with lid or foil. Bake at 350 degrees F. for 40 minutes or until artichokes are tender. Remove artichokes from baking dish and place on rack, cool to room temperature.

Tired of constantly being broke, and stuck in an unhappy marriage, a young husband decided to solve both problems by taking out a large insurance policy on his wife (with himself as the beneficiary), and arranging to have her killed.
A "friend of a friend" put him in touch with a nefarious underworld
figure, who went by the name of "Artie." Artie explained to the husband that his going price for snuffing out a spouse was $5,000.
The husband said he was willing to pay that amount, but that he
wouldn't have any cash on hand until he could collect his wife's
insurance money.
Artie insisted on being paid SOMETHING up front. The man opened up his wallet, displaying the single dollar bill that rested inside.
Artie sighed, rolled his eyes, and reluctantly agreed to accept the
dollar as down payment for the dirty deed.
A few days later, Artie followed the man's wife to the local
Safeway grocery store. There, he surprised her in the produce
department, and proceeded to strangle her with his gloved hands.
As the poor unsuspecting woman drew her last breath, and slumped to the floor, the manager of the produce department stumbled unexpectedly onto the scene. Unwilling to leave any witnesses behind, Artie had no choice but to strangle the produce manager as well.
Unknown to Artie, the entire proceedings were captured by hidden cameras and observed by the store's security guard, who immediately called the police. Artie was caught and arrested before he could leave the store.
Under intense questioning at the police station, Artie revealed
the sordid plan, including his financial arrangements with the
hapless husband.
And that is why, the next day in the newspaper, the headline
said, "ARTIE CHOKES TWO FOR A DOLLAR AT SAFEWAY."
