I have about 2kg (4lb) of bananas at home and I need to make something out of them real soon cause it's going bad because I bought them on sale.Please help!

You can peel them, cut them into slices and freeze them for up to six months! I keep loads of sliced bananas in the freezer to add to fruit smoothies. I prefer to freeze the fresh fruit that way I don't need ice to make the smoothie ice cold.

I also add the thawed out frozen banana slices to cakes and muffin mixes to make them more moist, and sneak in extra fruit without my kids knowing it.

Banana Bread is always good, but it's not going to use them all. But it is super good!!

250 g all-purpose flour
5 g baking soda
2 g salt
115 g butter
110 g brown sugar
2 eggs, beaten
525 g mashed overripe bananas
DIRECTIONS
Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
In a large bowl, combine flour, baking soda and salt. In a separate bowl, cream together butter and brown sugar. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; stir just to moisten. Pour batter into prepared loaf pan.
Bake in preheated oven for 60 to 65 minutes, until a toothpick inserted into center of the loaf comes out clean. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.

There's also a fabulous banana pudding/custard thing. Here's the recipe for that. I don't know if you have access to these ingredients, but we southerners love our banana pudding and could turn ALL those bananas into pudding very quicky.

Ooh, I have the best recipe for you! These are so good and so easy to make:

Banana and Kiwi Spring Rolls

about 3 large firm and ripe bananas
about 3 to 4 medium firm, ripe kiwis, peeled and sliced
about 6 spring roll wrappers (thawed if frozen)
3 tbsp of light brown sugar
1 large egg white, lightly beaten
peanut oil
powdered sugar

1. Cut a banana in half lenghtwise. Place the banana half, cut side up, on your work surface and position 3 to 5 kiwi slices (or as many as will fit without overlapping the slices). Top with the other banana half. Holding the banana firmly, cut it in half crosswise. Repeat with remaining bananas and kiwis.
2. Place spring roll wrapper on the work surface with a corner facing you. Place a stuffed banana half across the middle of the wrapper. Sprinkle the banana with 1 1/2 tsp of brown sugar. Fold the bottom corner of the wrapper over the banana and tuck it under. Fold in the sides and roll the banana almost up to the end. Brush the top corner with a little egg white, roll up and press firmly to seal. Prepare the rest of the rolls the same way.
3. Pour oil to a depth of 2 inches into a wok or deep skillet and heat over medium-high heat to 375 degrees F. Fry the rolls, 3 at a time, until deep golden, about 4 minutes. Turn several times during the frying process. Using tongs or a slotted spoon, transfer to a double layer of paper towels to drain. Repeat with the rest of the rolls.
4. Place the rolls on individual places, sprinkle with powdered sugar and serve immediately.

Annddd . . you can also do this without kiwis. I just used bananas. I sliced the bananas in half lengthwise, then just placed a banana half in the spring roll wrapper. Yum! I also used vanilla ice cream instead of powdered sugar. Many stores, including Wal-mart, sell spring roll wrappers, if you're having a hard time finding them. They were in the produce section, right by the tofu.

That happens to me also..So I freeze the over ripe bananas and later use them in banana bread. Yes they will turn brown in the freezer but doesn't matter as the best banana bread is made from over-ripe ones. However, if you have quite a few that are still yellow I suggest making a quick banana pudding using Jello brand vanilla pudding mix and vanilla wafer cookies. Layer the cookies, pudding, sliced bananas..then at the top add another layer of banana and go around the bowl with the cookies standing half way in the pudding. My family loves it.

Fried bananas. Bananas foster (fry them then flame them with some Grand Marnier). Banana smoothies. Banana split. Banana Bread. Humming bird cake

HUMMINGBIRD CAKE

2 cups flour
2 cups sugar
2 bananas, mashed
¼ cup chopped nuts
¾ cup vegetable oil
8 oz. crushed pineapple, drained
3 eggs, beaten
1 tsp vanilla
½ tsp cinnamon
1 tsp baking soda
1 tsp salt

Mix together all ingredients using a whisk or hand beater. Transfer batter into a greased ring or bundt pan.

Bake for 50 minutes at 350°F.

Mix up some vanilla pudding, throw in some sliced bananas and 'Nilla Wafers.

Punch Bowl Cake Yellow Cake Mix - baked 9 x 12 according to package directions 1 large can - crushed pineapple in juice 2 cans - cherry pie filling 2 - 4 serving size boxes - instant vanilla pudding, prepared 8-12 ounces Cool Whip (depending on how much you like) Nuts if desired You will need a large bowl, preferrably a punch bowl or large clear bowl so you can see the layers. Crumble half of the cake into the bottom of the serving bowl. Layer on pudding, half of the pineapple with juice, half of the pudding, one can of filling and cool whip. Repeat layers once more and finish with cool whip on top, sprinkle with nuts if desired or garnish with a few cherries. CHILL FOR AT LEAST 4 HOURS, overnight if possible! Yummmm! :)

Banana Split Cake

1-1/2 cups Graham Cracker Crumbs
1 cup sugar, divided
1/3 cup butter, melted
2 pkg. (8 oz. each) Cream Cheese, softened
1 can (20 oz.) crushed pineapple, drained
6 medium bananas, divided
2 cups cold milk
2 pkg. (4-serving size each) Vanilla Flavor Instant Pudding & Pie Filling
2 cups thawed Whipped Topping, divided
1 cup Chopped Pecans

MIX crumbs, 1/4 cup of the sugar and the butter; press firmly onto bottom of 13x9-inch pan. Freeze 10 min.
BEAT cream cheese and remaining 3/4 cup sugar with electric mixer on medium speed until well blended. Spread carefully over crust; top with pineapple. Slice 4 of the bananas; arrange over pineapple.
POUR milk into medium bowl. Add dry pudding mixes. Beat with wire whisk 2 min. or until well blended. Gently stir in 1 cup of the whipped topping; spread over banana layer in pan. Top with remaining 1 cup whipped topping; sprinkle with pecans. Refrigerate 5 hours. Slice remaining 2 bananas just before serving; arrange over dessert. Store any leftover dessert in refrigerator.

Make a yellow cake mix according to the directions. Mix whipping cream with powdered sugar and vanilla. Fill layers with sliced banana, glazed walnuts and cream mixture. Top with more cream mixture and sliced bananas. Heat a jar of caramel topping and spoon over the top of the cake. Sprinkle with glazed walnuts. Good stuff!

Make Banana Bread- if you have cookbook it would be in the quick breads section. If you don't have a cookbook, just search for Banana Bread on the net and you'll probably find lots of recipes. With banana bread you need the bananas to be really ripe, so its perfect.
