25 years ago there was a stand-alone word processor which did this. As far as I can tell you can't do it using MS Word - if you really can't, then is there other software which will do this?

There is a program that will do it :
Word Frequency Count Software 7.0

A way to do this from within Word is :

Press Ctrl+H to display the Replace tab of the Find and Replace dialog box.

In the Find What box, enter the word or phrase you want counted.

In the Replace With box, enter " ^& " (no quotations). This character sequence tells Word that you want to replace what you find with whatever you placed in the Find What box.
(In other words, you are replacing the word or phrase with itself.)

If you are searching for individual words, make sure you click the Find Whole Words Only check box.
Click on Replace All.

Word makes the replacements and shows you how many instances it replaced.
That is the number you want.

I know what you mean & I don't think you can ,directly, either.

One way which works is to use the "replace" function in Edit - Find and replace the word you're interested in with another (I should use gibberish for the new one). It'll tell you how many times its done it. Then replace it back again!
