I've tried melting a couple different kinds ie. hershey's kisses with a double boiler but it starts to harden too quickly and gets goopy.

I would use chips, but what your describing sounds like you are heating the chocolate too fast. With the double boiler once the water comes to a boil bring it down to a simmer because chocolate melts at low temperature (around body temperature) also if steam escapes from your double boiler and probably is getting into your chocolate and ruining it. So go slow and with low heat is the way to go. Try again and good luck.

semi-sweet chocolate chips usually have something on the package that says you can melt it.

i make fudge out of ghirardelli chocolate bars

lindt also works and it's got to be the best chocolate in the world

Ghirardelli chocolate is the best. Have your temp in the double boiler on simmer.

We use Nestle's semi chocolate pieces and have never had a problem with the fudge.

take any chocolate. put the chocolate in a bowl and put it in a warm place. don't mind if this answer is stupid. i'm only 12
