The first Mardi Gras in Louisiana was on Mar. 3, 1699 in Pointe du Mardi Gras (about 70 miles down river from the present location of New Orleans). I do not think the first time for New Orleans is known. I think they imagine it to have begun in 1743 and started by the Marquis de Vaudreuil after he became governor of Louisiana.

Be aware of carnival and Mardi Gras.
Carnival is the festive season that begins on the Epiphany (Jan. 6). It’s the twelfth day of Christmas and the day the gift-bearing wise men visited the Christ child. It ends on Mardi Gras.

Mardi Gras is the time of year to say farewell to the fat or flesh (boeuf gras) before Lent. King cake is the most widely recognized symbol of pre-Lenten feasting. It appears on the Epiphany but it is most often found the days leading up to Fat Tuesday.
