NO carbs? Well, that's not a diet, that a Duncan Yo-Yo! Your poor brain! It's the only organ that runs only on carbohydrates.
You seem to indicate that you lose weight quickly when you cut out the carbs. Is the reverse true? Do you gain weight when you eat carbs? Do you like carbs?
If so, then you need to learn how to incorporate them into your diet. In the proper portion sizes, complex carbohydrates, fruits and vegetables can be the base of a diet geared towards weight reduction and maintenance. I honestly eat 6 servings of grains (mainly fiber-rich whole grains), 5 servings of fruit, and 5 servings of veggies in my current maintenance mode - weight hasn't fluxuated by more than 4 pounds in the last year on this plan.
Change your diet habits, and you will never go "on" or "off" a diet again.

Are the high proteins items you choose high in fat and sodium? If so, work on making different choices that are lower in fat and sodium. Remember to exercise, as the others have advised. Find an exercise you enjoy!

you might have been taking in high fat along with high protein. try lean meals and lots more water to fill you up, plus some exercise to burn off the fat and help you lose water
