Chocolate melts quickly...sometimes too quickly then its ruined & clumpy. Melt slowly in a double boiler...a bowl on top of a pot with small amount of water.

1 minute or less in microwave. 3 minutes or less on stovetop over VERY low heat. Watch it carefully. Key is to remove from heat source before it's fully melted (about 3/4 melted), then gently stir until fully melted. This keeps it from overcooking into a gritty, dry mass.
