Yes of course you can use provolone. Im very experienced with Italian food.
Provolone will melt differently, wont be as soft, and has a slightly smokey taste to it. But its a fine substitute. BTW most of the time people use the cheap Mozzerella anyway, whole milk Mozz has an excellent consistency and is fantastic, i always use whole milk.
In my Parm - I mix reggiano and Mozz and sometimes will use some provolone too.

I always use provolone for chicken parm anyway. It has a nicer consistency and melt quite nicely. However I put parm cheese in the sauce for added flavor. And in most cases you would use the parm as a topping instead of mozzarella cheese. so use what ever you like.

Provolone has a slightly smoky flavor that I love. I think it would improve the dish but what happened to the Parmesan cheese? When I make veal Parmesan I use at least 1 other cheese with the Parmesan. Either Romano or asiago. The dominant cheese should still be Parmesan.

I'm italian living in italy...so.. usually when a dish has a "Parmigiana" in the name it means it has to have some tomato+mozzarella melted+basil leaves... so Provolone it's not recommanded mainly because it's a bit spicy cheese and melts in a completely different way from mozzarella.
For sure you can try using provolone just keep in mind that the final dish will have a different taste and different hardness/softness compared to a recipe with mozzarella so will probably look also different... :)

I would definitely go get the Parmesan - Provolone will change the taste - its just not the same nor can Provolone be substituded for Parmesan.

I am Italian in sydney,I am chef, I was born and bred in italy i never hered about chiken parmigiana any way provolone is not used for cook mozzarella yes

Mozzarella is a good substitute, I've used it, however, if you put it on the top layer of whatever you're making, don't let it get too hot-- it will burn and taste rubbery!!

ooo i love provolone. mozzerella is typically used for chicken parm, but provolone might be an interesting and tasty twist to it. i'd say go for it.
