I need a room from 08:00 until 19:00 on the same day very close to the Paris CDG airport.
Most hotels from what I see do not offer a day rate.

You won't find any sort of day rate.
Your best bet would be to pay for one night. Check in at normal check in (around 15:00) and then check out at 19:00, and pay one night.
Another option would be to pay for the night before, so that you can check in at 8:00 the next morning. And then check out at normal check out which is around 12:00. The hotel will hold your baggage for you while even after check out for several hours, so you can use that time to shop/eat/whatever.
I would suggest paying for the room for the night before and checking in at 8:00 the following day. (Make sure the hotel knows you are doing this) And then check out at 12:00. get some lunch, watch tv in the bar, and then just go to the aiport a little early.
