Makes 8 large or 12 medium muffins

3 tablespoons melted butter
2 cups all-purpose flour
1/2 cup sugar
1/2 teaspoon salt
3 teaspoons baking powder
1 teaspoon cinnamon
1 egg
1 cup milk, plus more if needed
1 cup fresh or frozen blueberries

1. Preheat the oven to 400F. Grease a 12 compartment muffin tin.

2. Mix together the dry ingredients in a bowl. Beat together the egg, milk and butter. Make a well in the center of the dry ingredients and pour the wet ingredients into it. Using a large spoon or rubber spatula, combine the ingredients swiftly, stirring and folding rather than beating, and stopping as soon as all the dry ingredients are moistened. The batter should be lumpy, not smooth. Stir blueberries into the batter at the last minute.

3. Spoon the batter into the muffin tins, filling them about two-thirds full. (If you prefer bigger muffins, fill the cups almost to the top. Pour 1/4 cup water into those cups left empty.) Bake 20-30 minutes, or until the muffins are nicely browned and a toothpick inserted into the center of one of them comes out clean. Remove from oven and let rest for 5 minutes before taking them out of the tin. Serve warm.

Blueberry Muffins

Ingredients

275g self raising flour
175g unrefined sugar
1tsp baking powder
100ml of vegetable oil
225ml soya milk
half a teaspoon vanilla essence
fresh or dried blueberries

Put the flour, sugar and baking powder into a large bowl.

Whisk in the vegetable oil, milk and vanilla essence in a jug and stir it into the mixture.

Add the blueberries to the mixture and quickly stir it in. Don't stir for more than 30 seconds, it is ok if the mixture is lumpy.

Put the mixture into muffin cases, double the cases so that the mixture rises and doesn`t spread out.

Put in a preheated oven at 200C/400F and bake for about 20-30 mins until the muffins have risen.

A portion of the blueberries is mashed, to make these muffins very blue.
INGREDIENTS:
1/4 cup butter, softened
2/3 cup sugar
1 teaspoon finely grated lemon peel
1 egg
1/2 teaspoon vanilla
1 1/4 cups blueberries
1 cup plus 2 tbsp cake flour, sifted
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup milk
1/4 cup chopped pecans, optional
Topping:
1 teaspoon sugar mixed with 1/8 teaspoon ground cinnamon or ground nutmeg
PREPARATION:
Preheat oven to 375°. In large bowl, cream butter, sugar, and lemon until light, about 4 to 5 minutes. Beat in egg and vanilla. Mash 1/4 cup of the blueberries and beat into batter. Whisk together flour, baking powder and salt.

Fold dry ingredients into batter, a little at a time, alternating with milk. Fold in remaining 1 cup blueberries and the pecans, if using. Spoon into 8 paper lined muffin cups.
Sprinkle each muffin with the sugar and spice mixture.
Bake until muffins spring back when lightly touched, about 20 to 25 minutes.

Three-b (buckwheat, Blueberry, and Butternut ) Muffins

nonstick cooking spray or 12 paper baking cups
1 1/3 cups flour
3/4 cup buckwheat flour
1/4-1/3 cup sugar or Splenda sugar substitute
1 1/2 teaspoons baking powder
1 teaspoon ground cinnamon
1/2 teaspoon baking soda
1/2 teaspoon salt
2 eggs, slightly beaten
1 cup mashed cooked butternut squash
1/2 cup milk
2 tablespoons cooking oil
1/2 teaspoon finely shredded orange rind
1/4 cup orange juice
3/4 cup fresh blueberries or frozen blueberries
1/4 cup rolled oats (Oatmeal)

1. Preheat oven to 400 degrees; Spray twelve 2-1/2-inch muffins cups with nonstick spray or line with paper muffins cups; set pan aside.
2. Combine, flour, buckwheat flour, sugar, baking powder,cinnamon,baking soda and salt in a medium mixing bowl;make a well in the center of flour mixture; set aside.
3. In a mixing bowl;Combine the eggs, squash, milk, oil, orange peel, and orange juice; Add the egg mixture all at once to flour mixture, stir until just moistened (Batter should be LUMPY), fold in Blueberries.
4. Spoon batter into the prepared muffin cups, filling each almost full; sprinkle with oats.
5. Bake for 15 to 20 minutes or until the muffins are light brown: cool in muffin cups oo wire rack for 5 minutes, Remove from muffins cups; serve warm, Enjoy.

I gust buy Jiff that make a great blueberry muffin mix.It only take 20min's off your time also.
