My boyfriend and I want to start making our own bread rather than purchasing store brought. We were wondering what makes the difference between specialized wheat breads -such as whole grain or seven grain, whole grain oat, etc.- as opposed to simple wheat bread. Also, what gives breads their different textures (for instance some are light and porous, others more condensed)? Any info on where we might further research this would be equally helpful.
