Chicken and Smoked-Sausage Gumbo

SERVES: 4
ingredients

* 3 tablespoons cooking oil
* 3 tablespoons flour
* 1 onion, chopped
* 2 ribs celery, chopped
* 1 green bell pepper, chopped
* 1 10-ounce package frozen sliced okra
* 1 bay leaf
* 1 1/2 teaspoons dried thyme
* 1 teaspoon dried oregano
* 2 teaspoons salt
* 1/4 teaspoon fresh-ground black pepper
* 1/4 teaspoon cayenne
* 1 3/4 cups canned crushed tomatoes in thick puree (one 15-ounce can)
* 1 quart canned low-sodium chicken broth or homemade stock
* 1/2 pound smoked sausage, halved lengthwise and cut crosswise into 1/4-inch slices
* 1 pound boneless, skinless chicken breasts, cut into 3/4-inch pieces
* 3/4 cup long-grain rice


directions

1. In a large stainless-steel pot, heat the oil over moderate heat. Whisk in the flour and cook, whisking, until starting to brown, about 4 minutes. Reduce the heat to moderately low. Stir in the onion, celery, and bell pepper and cook until starting to soften, about 7 minutes. Add the okra, bay leaf, thyme, oregano, salt, black pepper, cayenne, and tomatoes. Cover and cook for 5 minutes.
2. Stir in the broth and the smoked sausage. Bring to a boil. Reduce the heat and simmer for 15 minutes. Add the chicken and cook until just done, 4 to 5 minutes longer. Remove the bay leaf.
3. Meanwhile, bring a medium pot of salted water to a boil. Stir in the rice and boil until just done, 10 to 12 minutes. Drain. Put a mound of rice in the center of each bowl. Ladle the gumbo around the rice.

Vegetable Gumbo

Ingredients

olive oil
2 small onions (finely chopped)
2 red peppers (cut into chunks)
20 okra pods (remove tops and cut in half)
3 large mushrooms (cut into chunks)
tin of tomatoes
1 tbs paprika
2 tbs plain white flour
oregano
coriander
300ml vegetable stock
2 cloves garlic (crushed)
1 small chilli (finely chopped)

Fry the onion, garlic and chilli, in a saucepan in the olive oil. Add the paprika and stir throughly and then add the flour and continue to stir. Next place in the peppers and continue to stir for a few minutes. Add the mushrooms and continue to stir. If the mixture becomes too dry add a little more oil but it does work better if it is quite dry.

When the vegetables are well mixed with the sauce and nearly cooked add the okra. Mix well and then add the tin of tomatoes and herbs and stir again. Then add the stock and simmer for 10 minutes. Depending on the taste of your stock you may want to add more salt.

Shrimp & Okra Gumbo

1 stick butter
2 heaping tablespoon shortening
½ to ¾ cups flour
1 medium onion, chopped
1 ribs celery, chopped
1 medium bell pepper, chopped
2 bags sliced okra, fried until not slimy
1 large (28oz) can whole peeled tomatoes
1-2 lbs. Peeled shrimp
1 (1.25 oz) jar Zatarain’s Gumbo File
Salt and Pepper to taste


Make a roux with ½ butter and ½ shortening and flour.
Add onion, celery and bell pepper, saute.
Fry okra well done.
Put okra and a large can tomatoes in a large pot and add roux mixture.
Bring to a boil, then simmer for an hour or more until cooked to pieces.
Drop shrimp in and simmer for a few minutes.
Do Not Boil this!
Add file and seasonings.

Seafood Gumbo

1/4 pound Italian sweet or spicy sausage, sliced
1 tablespoon olive oil
1 small onion, chopped (1/2 cup)
1 medium stalk celery, chopped (1/2 cup)
1/2 green bell pepper, cored, seeded, and chopped (1/2 cup)
3 14 1/2-ounce cans chicken broth
1 28-ounce can crushed tomatoes
1 11-ounce bag frozen okra
2 tablespoons all-purpose flour
1 tablespoon salt
1/4 teaspoon pepper
1 tablespoon dried thyme
1 bay leaf
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon Creole (or Old Bay) seasoning
1 teaspoon Worcestershire sauce
4 scallions, finely chopped (1/2 cup)
1/2 pound shrimp (peeled and deveined), cut into thirds
1/2 pound crabmeat
1/4 cup chopped fresh parsley
Place the sausage in a saucepan and fill with water to cover. Bring to a boil and cook for 3 to 4 minutes. Drain and set aside.In a large pot over medium-high heat, heat the oil. Add the onion, celery, and green pepper and cook until softened (but not browned), about 5 minutes, stirring occasionally. Add the chicken broth, tomatoes, okra, and reserved sausage, cover, and bring to a boil. Continue cooking, covered, over high heat for 5 minutes.
In a small bowl, whisk together the flour and 1/2 cup of water. Stir the flour mixture, salt, spices, and Worcestershire sauce into the pot, cover, and cook over high heat for another 10 minutes.
Add the scallions, shrimp, and crabmeat, reduce heat to medium, and cook for 5 minutes. Remove the bay leaf, stir in the parsley, and remove from heat. Cover and let sit for 5 minutes. Serve over rice.
