when cooking cafe cakes....what is the difference in adding oil or margarine?

There isn't any difference between adding oil or margarine. Butter gives a much nicer flavor, especially in baking, but what you use will depend on personal choice.
I like to use the margarine with omega 3 and no trans fat, but I cook for a diebetic heart patient.

Margarine is just solidified oil. all you have to do is melt the margarine before you add it.

EEEEEEk use butter, it has the same fat content as marg by law, and tastes so much better. Always use butter when you bake unless the recipe says oil. I AM a REAL CHEF!!!
