i follow the usual directions: melt butter, melt marshmallow, turn off fire then add rice krispies and mix. but for some reason they always turn hard after they cool

when i buy the store brand marshmallows my rice krispies always turn out hard so i have to buy the good marshmallows (jet puffed).

Use name brand marshmallow and more of them. I always like them real chewy so I always add more marshmallow then called for. Also, when you add the cereal, remove the pan from the heat so you do not burn the marshmellow or dry the cereal out anymore than it already is.

I think you are cooking the marshmellow to long. Like candy, there is a hard ball and a soft ball stage. I think you simply need to not boil the marshmellow so long.

add more marshmallows, buy the jumbo marshmallows and only put 45 if you want chewy and 50 for really really chewy

Cut and wrap them in plastic wrap while still a little warm.
