what kind of beans do you use? and what seasons??

I have a great recipe that I have used for years. Here it is:

"Chili Con Carne

3T. Olive oil
1 Lg. onion, minced
2 cloves garlic, minced
1 lb. chopped beef
3 c. water
1 1/3 c. canned tomatoes
1 Green pepper, minced
1/2t. celery seed
1/4 t. cayenne
1 t. cumin seed, crushed
1 small bay leaf
2 T. chili powder
1/8 t. basil
1 1/2 t. salt

1. Heat oil in skillet, add onion and garlic and suate until golden brown. Add the meat & brown.
2. Transfer the meat mixture to a large saucepan and add the remaining ingredients. Bring to a boil, reduce the heat and simmer, uncovered, until the sauce is thick, or about 3 hrs. If desired, add one can of kidney beans just before serving.

Now, that's Jmaes Beard's recipe in the old New York Times Cookbook back when not everyone was making chili like crazy, as they are now.

I alter this recipe to suit my own taste, or the taste of who I am serving it to. I usually about triple the amount of the seasomings, and often make a double recipe anyway, because it freezes so well. You don't have to use beef, if you are watching cholesterol, you can use ground turkey instead of beef. You need to drain and rinse any canned beans to get rid of alot of the sodium. You can add any other kind of beans you may like, such as Pinto, Black Beans, etc. True "Chili" does not have any beans, but I love them and they are very good for you.

I just didn't wany to give Mr. Beard's recipe out any differently than he wrote it.

Also, check out Bobby Flay and Tyler Florence on www.foodnetwork.com about terrific chili recipes. I hope this answers some of your questions. Oh, and if you wany it hotter, all you need to do is add as many drops of Tabasco or other hot sauce you may like. This recipe is not "Hot."

Also, with this recipe, after the first couple of times, I changed to a lg. pot from the beginning. No need to wash two pots and lose the "brown bits" in the bottom of the saute pan.

Also, be careful with the garlic. I add the onions first, and when they beginto carmelize, then I add the garlic (For me, usually about 6 cloves) because burnt or even really browned garlic tastes terrible.

Pinto beans (canned) are the best & Caroll Shelby's Chili Seasoning Kit is excellent and convenient.

3-Bean Chili

Prep Time: 15 min
Total Time: 40 min
Makes: 10 servings, about 1-1/2 cups each

2 lb. lean ground beef
1 small yellow onion, chopped
1 small green pepper, chopped
2 cans (16 oz. each) BUSH'S BEST Dark Red Kidney Beans, undrained
2 cans (16 oz. each) BUSH'S BEST Pinto Beans, undrained
2 cans (16 oz. each) BUSH'S BEST Black Beans, undrained
1 can (14.5 oz.) diced tomatoes, undrained
1 can (6 oz.) tomato paste
2 envelopes chili seasoning mix
1/2 tsp. McCORMICK Ground Cinnamon
1-1/4 cups BREAKSTONE'S or KNUDSEN Sour Cream

BROWN meat in large saucepot on medium heat; drain. Add onion and green pepper; cook until tender, stirring frequently.
ADD all remaining ingredients except sour cream; mix well. Bring to boil; cover. Reduce heat to medium-low; simmer 20 minutes, stirring occasionally.
SPOON into soup bowls; top with sour cream.

KRAFT KITCHENS TIPS
Great Substitute
Prepare as directed, substituting 2 pkg. (16 oz. each) thawed frozen LOUIS RICH Pure Ground Turkey for the ground beef.

pinto beans are the best. if you're going to use red beans make sure they cook longer. they seem to be a firmer bean. as for seasonings stick to the basics like garlic, cumin, salt pepper, onions and chili powder.

my friend made this amazing chili. and I do not even like chili but this was BOMB , all he did was combine 2 cans hormel chili beans , a can of chili sauce, 12 cubes of cheese, (bite size) and cheetos!! ya make sure they are the crunchy ones abut a handful and 1/2 c. v8 it was good .and a large spoonful of sour cream / add salt or seasoning pref.

I open the can of Hormel Chili with beans, pour it in a bowl, and heat it in the microwave. I don't like doing dishes so I eat it with Fritos Scoops so I don't have to wash a spoon.

best way is have somebody do the work for you and have them serve it to you :-)
