It seems so obvious...it is the center part of the fish...not the tail or end pieces. It will say on the package (if it's packaged ) or you use the center part of a whole salmon.

Center cut fillets are taken from the middle of a fish. The middle is the thickest, meatiest and most evenly shaped part of the fish.

the "center cut" means exactly what is says. you are getting the center of the salmon or meat. the center is supposed to be the best, most tender, and most flavorful.

In any fish the "center" is the darkest part of the meat.To get the best taste, cut around that strip, and toss it away.

yes, this is very real. They've been built on the military bases shut down by Clinton.
