3-Bean Chili

Makes: 10 servings, about 1-1/2 cups each
2 lb. lean ground beef
1 small yellow onion, chopped
1 small green pepper, chopped
2 cans (16 oz. each) BUSH'S BEST Dark Red Kidney Beans, undrained
2 cans (16 oz. each) BUSH'S BEST Pinto Beans, undrained
2 cans (16 oz. each) BUSH'S BEST Black Beans, undrained
1 can (14.5 oz.) diced tomatoes, undrained
1 can (6 oz.) tomato paste
2 envelopes chili seasoning mix
1/2 tsp. McCORMICK Ground Cinnamon
1-1/4 cups BREAKSTONE'S or KNUDSEN Sour Cream
BROWN meat in large saucepot on medium heat; drain. Add onion and green pepper; cook until tender, stirring frequently.
ADD all remaining ingredients except sour cream; mix well. Bring to boil; cover. Reduce heat to medium-low; simmer 20 minutes, stirring occasionally.
SPOON into soup bowls; top with sour cream.

Prepare as directed, substituting 2 pkg. (16 oz. each) thawed frozen LOUIS RICH Pure Ground Turkey for the ground beef.

HOME CANNING CHILI
Here's a recipe along with the detailed instructions for canning Chili, No Beans, adapted from the newest Ball Blue Book, which is a nice reference to have on hand if you plan to do any canning.
You'll need a pressure canner (12 quart capacity or more), canning jars and new lids and rings, a jar lifter (for removing hot jars after processing) and a canning funnel.
5 lbs ground beef
2 cups chopped onions
1 clove minced garlic
6 cups canned tomatoes and juice
1/2 cup chili powder
1 1/2 tablespoons salt
1 hot red pepper, finely chopped
1 teaspoon ground cumin seed

If you have a chili recipe that you like, add extra meat, and leave out the beans. Or replace the beans with potatoes, or zucchini, or corn, or a mixture of veg that you like. I like corn, sliced olives, zuke, chopped green chile from a can. I don't use a recipe for chili. I saute chili powder in a little oil, add some onions, garlic, and meat (any ground meat, or any cubed meat). Cook until onion is translucent. Meat does not have to be cooked thru. Then I add cans of chopped tomatoes, maybe some tomatoe sauce or paste, any other veg (beans, or above), and simmer at low heat until done. I season to taste with more chili pwder, if needed, salt, pepper, garlic powder, etc. If you want to leave it for a couple of hours, put it into a covered airtight pot (must be air/water tight, ot it will dry out and ruin it) and put into a low oven (200-250') and leave it until done instead of simmering on stovetop.

This dish, which cooks in only 20 minutes, is a delicious blend of chicken, white beans and green chiles in a spicy sauce.
Makes 4 (1-cup) servings.
Prep Time: 10 minutes
Cook Time: 20 minutes
Ingredients
2 tablespoons oil
1 1/2 pounds boneless skinless chicken breasts, cut in 1/2-inch cubes
1/2 cup chopped onion
2 teaspoons McCormick® Ground Cumin
1 1/2 teaspoons McCormick® California Style Garlic Salt with Parsley
3/4 teaspoon McCormick® Oregano Leaves
1/4 teaspoon McCormick® Chili Powder
1/4 teaspoon McCormick® Ground Red Pepper (optional)
1 can (14 1/2 ounces) white beans, undrained
1 can (4 1/2 ounces) chopped green chiles, drained
1/2 cup chicken broth
Assorted toppings such as sour cream, sliced green onions, sliced jalapeno peppers and chopped tomatoes (optional)
Directions
1. Heat oil in large skillet on medium-high heat. Add chicken and onion; cook and stir 5 minutes or until lightly browned.
2. Stir in spices and remaining ingredients. Bring to boil. Reduce heat to low; simmer, uncovered, 10 to 15 minutes, stirring occasionally. Serve with assorted toppings, if desired.

Mexican Chili
2 3/4 lbs kidney beans
8oz onion (chopped)
2 1/4 oz chili powder
3 to 4 oz cumin seed (ground)
water
1 qt. tomato puree
9 lbs. ground beef
1 stick oleo
2 oz. salt
5 oz. flour
Cook beans until done. Cook onion in oleo, add beef and cook until it changes color. Add beans, puree, chili powder, cumin seed, salt and enough water to make total volume of 12 quarts. Simmer about 3 hours. Make paste of flour. Add to bean mixture and cook until flour is cooked in, about five minutes. Serve one cup to each person.

Ingredients:
Pork belly (thumb size)
Chilli (green & red) - 1"
Fermented black beans (1 tablespoon washed)
Ginger (1" shreds)
Garlic (1 whole chopped)
Heat oil, fry ginger, garlic and fermented beans last. Add pork, fry for about 5 mins then add chilli, stir, add sugar, soy sauce and pepper, cover for 2 mins. Add enough water to cover all food, turn to low fire and let stew till water reduced to one-third the amount, add more soy sauce and sugar to taste. Be careful with the soy sauce as the fermented black beans are salty themselves.
Serve with bread (slices/pita) or rice. Can be used a bread fillings as well.

You're going to a cook-off, right? That means your recipe has to be original---or at the very least not availabe on a food product website. My friend has an awesome recipe. I have been trying to get the recipe from her but cannot reach her tonight. It is phenomenal and original and you would love it. I'll keep trying and let you know if I get it for you.
