and if you test them for capacitance with a farad meter will it show as if you were measuring a capacitor

Just like capacitors,the max voltage will vary. Yes, a leyden jar is a capacitor and should give you a reading on a farad meter.

A capacitor is technically 2 conductive plates with an insulator in the middle. There are millions of things that pose as capacitors, such as yourself(static electricity).

Voltage should be pretty high, probably limited more by the clumsiness of the attachments than the properties of the glass. And, yes, a capacity meter will read it as a capacitor. Expect a very small value. Small enough that the leads will seriously disturb the reading. But, yeah, it is a genuine capacitor.
